Usually I like all for symmetrical, but single bevel knives are an exception. I might get blasted for this, but I'm not the biggest fan of the curve to the tip. I prefer the inverted K tip ones.

Thank you for your feedback! 🙏🏾I really have to get used to this new mic and podcast equipment. I have to talk straight into the mic for the best sound, which is kind of hard. And perhaps I should tweak/fine tune the equalizer settings a bit. I hope it'll get better in my next video's.

That's me. Crying every single time I see a Japanese knife because they're mostly asymmetric right handed, no matter what they tell you, and no matter single or double bevel. In fact, it's harder to get a left-handed asymmetric double beveled knife than a lefty single bevel... I had to email Ashi to custom make a left-handed 240 suji. I hope he doesn't forget and I hope when I finally fly to Sakai to collect it I'll be over the moon.

judging a blade by the pattern is pointless. that troll knife looks like it was made in a canister of ball bearings and 1095 powder sandwiched around a mono steel core. function should dictate form not the other way round. I personally like carbon steel; the problem is that it will rust. another issue, it doesn't hold an edge as well as fine stainless steel. stainless can be pattern welded it's just more involved and very hard to grind. can be a pain to sharpen without the correct stuff. these carbon blades are wall hangers, that's the only place for them.

I was judging the pattern for its aesthetic quality, not the knife's performance. Of course, a Damascus pattern does not make a knife perform better. Since I couldn't use the knife, I couldn't judge its performance. But I could give my opinion on the fit and finish of the knife. That's all I did. In my experience, carbon steel is easier to sharpen, takes a sharper edge, and retains an edge longer. I for one don't mind to baby my carbon knives. I like to care for my tools and I love the patina forming on my carbon steel blades. As much as I display my knives as the pieces of Art that they are, in the kitchen they are my tools. So my carbon steel blades are definitely not just hanging on my wall. I have many knives, both stainless and carbon. All have there place and purpose in my kitchen, depending on the tasks at hand. Form follows function is a great design perspective, but not the only one (I have studied Design and have a Masters degree). If Go Yoshizawa wants to make a Troll Killer to show off how good he is at hand forging Damascus steel, than I can only appreciate it. Is it conform the form follows function design filosophy? No, but he wasn't trying. The Troll Killer is a piece of Art and at the same time functions as a great tool in the kitchen. It performs amazingly!
