How to make this super yummy Cheesecake Cookie.
Here's what you'll need:
1/2 cup unsalted butter (113g)
1/2 cup cream cheese (4oz)
3/4 cup sugar (150g)
1 large egg (55g)
1 tsp vanilla (5ml)
1 and 2/3 cup all purpose flour (208g)
1/2 tsp baking powder (4g)
1/2 tsp salt (2g)
crushed graham crackers for coating
any jam or compote you prefer
1. In a bowl, cream or mix together room temperature butter and cream cheese until light and fluffy.
2. Add egg and vanilla. Mix until incorporated.
3.Sift-in flour, baking powder and salt. Mix until combined.
4. Cover and chill in the fridge for at least 1 hour.
5. Scoop the batter with quarter cup scooper or you can make it smaller depending on your preference.
6. Place in a baking sheet with about 2 inches gap in each cookie.
7. Bake in a preheated oven at 356ºF or 180ºC for 12-14 minutes.
8. Let it cool down completely.
9. This recipe yields 12 big or 24 small cream cheese cookie.
