Ingredients:
2lbs sweet potatoes
1 native coconut
1/4 yellow yam
3 1/2 cups all purpose flour
2tbs unsalted butter
1 cup sugar
2 cups cornmeal
4 cups coconut milk
1/4 cup shredded coconut flakes
Spices:
1tsp rose water
2 tsp nutmeg
1/2 tsp salt
1 tsp cinnamon powder
2 tbs vanilla
1 tbs mixed essence
1 tsp ginger powder
1tsp white rum
To Make custard:
Use remaining coconut milk and add 1tsp vanilla, 1/2 cup melted butter, 1 tbs cinnamon powder mix and add to pot and allow to boil for 2-3 minutes and set aside
Bake pudding for 2 1\2 hours in oven at 350 degrees Far.
After 1 1\2 hours in oven add custard on top of pudding to cover and put back in oven to complete baking
