Sweet Potato Stuffed Poori 🍠
(Makes 9-10)
Ingredients:
500g sweet potato (preferably indian)
Water
1 cup grated coconut
3/4 cup grated jaggery (as rq)
2-3 cups of maida
1 tsp salt (as rq)
2 tbsp ghee
1 glass (250ml) water (as rq)
Oil (as rq)
Procedure:
1- In a pot, cook 500g sweet potato (preferably indian), in 1 cup of water with salt until done. When cooled, peel it and mash it.
2- Add 1 cup grated coconut, 3/4 cup grated jaggery (as rq), 1 tsp cardamom powder. Mix well and keep aside. (It's best to prepare the filling after the dough.)
3- In a bowl, add 2-3 cups of maida, 1 tsp salt (as rq), 2 tbsp ghee. Mix well Add 1 glass (250ml) water (as rq). Mix to make a dough. Knead well and grease with some oil. Let it rest for 1 hour. Make the dough into balls as shown. Grease them with oil and let them rest for 15 mins.
4- Take 2 balls and roll them into pooris. Sprinkle them with sesame seeds. Then, roll them as shown. Flip it as shown in the video.
5- Add the sweet potato stuffing and spread evenly as shown. Place another poori on top.
6- Seal the edges. You can either use a fork, or make a design as shown.
7- Fry the pooris on medium flame till crisp as shown in the video. It's done!
