My girlfriend and i usually have 50 gallons fermenting 5 different 10 gallon batches we call them the kids . Every time a new batch starts one of us will see it bubbling away, and say the kids are behaving nicely that excitement never gets old. I like using ABV for my hydrometer readings that one just makes the most since in my head. If you tell me bricks or gravity I have to pull out my hydrometer and see what ABV that is so I know where your at lol.

LMAO when you speak about the hydrometer reading, it brings back sad memories as a beginner to distilling. I threw out 10 gallons of good wash because it was reading 0.00 but I'm ok now LMFAO. Thanks a million for your great in depth videos and explanation on how NOT to fck up lol.

3 yrs later and i stumbled upon your videos because i just want to educate myself in what i am drinking. first i want to say i love your videos. secondly, i have a question. do you use 2 separate hydrometers to test the ABV? one for the mash predistillation and one to test the product after distillation? thank you for such great education. update, about a couple seconds later, watching part 4 of your video gave me the answer to this question:).. love it!!

i couldn't find citric acid so i used a 100% natural lemon aid drink to get my PH down. it had citric acid, purified water and corn sugar nothing else. in a pinch it works quite well.

George, I have subscribed and hit the notification icon, this series is great! I had a couple questions about technique specifically for sweet potatoes. Since the sweet potatoes start intact, could you use an immersion circulator(sous vide machine) to heat the potatoes to the alpha-amylase and beta-amylase activation temperatures? Obviously allowing more time for the heat to penetrate the whole potato. If so, could you add them to the fermenter, then add a measured amount of fresh water and hit it with a big stick blender? Asking because if it would work it would allow you to process the batch less hands-on and potentially with less mess, but I didn't know if the sugars needed to be exposed to the water in order to extract the fermentable sugars, or if converting the starches inside the potato would be good enough. Thanks so much for all your great videos!

Yes this is a good question... The sweet potato does not need water to convert. The natural conversion happens much slower process and is how the potato reproduces itself. Example, potato stays in ground, starts to rot(ferment) Produces heat... amylase converts starch to sugar, potato creates runners which produce new plant. So yes, using a soux vide to bring to correct temp will in effect convert. Mash away with your preferred machine. I use a garburator that I bought new and use only for food processing. Hope that helps

Thanks George for another informative video. As you filmed the yeast starter, it was spectacular to see the volcanic eruptions of yeast colonies from the bottom....like a yeast lava lamp. Did anyone else notice? Is this due to a quick feed on the monosaccharides on the bottom of the jar...or what?

Love your classes George! I'm about 6 months green but soaking up your vids and others like a dry sponge. I started easy with an Air Still and love it. Now using Mile High Yeast and pulling 150 proof for the first 450ml, then it slowly begins dropping off. Not bad considering it only runs a gallon at a time. At 800ml I'm still well over 100 proof. I didn't have that with the other Big Popular Name Brand. QUESTION FOR YOU??? Is Star San safe to use for sterilizing my indoor gardening tools? I have hesitated doing so but think if we can injest it it's likely ok? Idk??? Thanks for all you do! 👊🏻✌🏻🍻🍻

Normally yes but there are some wines that do best at lower PH levels. The lowest one I can think of is 3.5. Just can't remember the name. Anyway, the general answer is yes.

Use the whole packet of yeast. I believe it is 7 grams of near that. Once pack for one batch up to 6 gallons.

Hummm the slower you cook them the sweeter they Get.. I cut like 5 potatoes and felt like my arm was gonna fall off! Hummm bake on low heat like 250 for four hours. That’s what I’m trying I’m gonna take them out when they start stinkin should be easier to cut. I have 3 shelves in my oven I put 30 lbs in there

A 7.5 ABV for all that work is pretty low and is not going to yield much end product. Why not use less sweet potatoes and up the SG with some sugar so you can reach like 1.090? Most of us are using 5-6 gallon fermenters and boilers so the recipe could be scaled down to that level easier by adding sugar unless you know a reason why sugar would adversely affect end product.

The way I've come to understand adding sugar to bump up the ABV you are potentially sacrificing some flavor. If you distill a sugar wash you end up with a neutral tasting spirit. So the more sugar you use the more diluted the flavor will be of your final product. Having said that I would add sugar because of what you are saying. With a 5 gallon mash I'm not going to get enough product to make it worth my effort without adding sugar. Plus I have a Pot Still, so I can't get that really high ABV distillate.

I think George's answer would be bumping the abv with sugar to get to 1.090 does work and won't adversely affect the end product, but he was ok with it where it ended up because he is going to run it through the reflux column. Instead of getting 150 proof and it dropping of precipitously he will end up with 190 proof through out most of the run. He will still end up with 1 1/2 gallons at 80 proof when he cuts it down. So why use sugar just to get more when it will be a cleaner product and he will still end up with enough.

Most people call it Somel since it wouldn’t really be a whisky.. most of the people I know will make mead and after the second ferment if they don’t like it they distill it ... I’m pretty sure George has a mead video so I would have assumed he has done the same .. obviously just assuming

rocky campbell in my opinion; when you distill a honey based mead, it ends up tasting like old-fashioned original flavor Listerine mouthwash. I am not a fan of that whatsoever. But I guess it depends on one’s taste buds?

I do like your videos George...however! I've emailed you a couple of times but I've never had a reply ☹️, also you can tell your really passionate about what you do, but you tend to go off on a tangent or start saying something then cut off mid sentence expecting us to know what your talking about! 🤔. I'm still very new to this hobby & as I'm in the UK when you rattle off Fahrenheit it can be confusing. I still like the videos though!

You can convert as easily as I can/ If I have not answered your email it is probably because you are asking about things I have already covered on introductory videos or asking me for my thoughts. I have said many times; I do not have thoughts to share when someone explains a process. I have hundreds of emails to go through so some are just overlooked because I cannot address them in a short reply.
