Easy to make sweet & sour beet sauce, as coating sauce for fried dishes like chicken, pork, fish, etc, Also good as dipping sauce for any fried or grilled food.
Ingredients & Procedures:
Peel & cut 1 medium-sized beet, put in blender, add 2 cups water & blend well.
Strain beet juice to a small pan, add 1/2 cup brown sugar, 1 tbsp fish sauce, 1/2 tbsp salt and dashes of ground white pepper.Stir to dissolve sugar & cook over medium heat.
Once it boils, add 1/2 cup of cane vinegar. Stir only when it starts to boil. Lower heat & let the mixture simmer for 15 minutes, stir occasionally.
After 15 minutes, thicken with 1 tbsp cornstarch dissolved in 2 tbsps of water, at this point you need to stir constantly so that the sauce won't turn lumpy.
After about 12-15 minutes, it now has the consistency we need.
Add 1/2 tbsp sesame oil & cook for a minute and it's done.
Transfer to a sterilized glass jar or bottle once it has cooled down. Cover & store in the refrigerator until you need to use it.
