Recipe:
Pork ribs - 1kg
Ginger - 30g
Soy sauce - 30ml
Shaoxing wine - 30ml
Egg white - 1
Corn starch - 30g
Sweet & sour sauce:
Shallot - 30g
Garlic - 30g
Sugar - 40g
Black vinegar - 30ml
Soy sayce - 30ml
Dark soy sauce - 30ml
Corn starch mix with water to thicken the sauce
Important: It is best to use black vinegar, if you are using another type, reduce the quantity to your taste, adding some ketchup to bring out more colour.
