As a chef for more than 15 years I would say sweating the cucumbers before covering them in brine is an absolute must. It doesn't just give the cucumbers the right concsistency, but getting as much of the water as possible out of the cucumbers before pickling them also matters when it comes to for how long you can store the pickled cucumbers without them going bad. The water in the cucumber will leak out to the brine if they are not allowed to sweat first, diluting the pickle juice and that's how you give something that is supposed to have a long shelf life, a much shorter shelf life. So don't forget to sweat the cucumbers for a couple hours, do your self a favor. You can absolutely sweat the onion too, but there's not a lot of need to sweat the peppers, they will do what they do well regardless.

Can I use the liquid that sweat out as a portion of the water making the brine? Would that ruin or change shelf life of anything?

@@brittse You probably could but I wouldn't myself because it will change the taste from the original recipe. The recommended pH level of pickles is lower than pH4 (if 4% or more salt is contained), or, lower than pH4. 6 (if less than 4% salt is contained) so I suggest getting a millivoltmeter (meassuring the PH).

I've been looking for a sweet and spicy pickle recipe, tony packo's sweet hots are my absolute favorite but you can't find them out west here (we're originally from Ohio). I've got two 30qt bowls full of picking Cukes that just harvested yesterday that I'll be trying this out on!

Just a tip, if you cut onions and they make your eyes water up your knife probably needs sharpening. You're reacting to what gets released from the cells of the onion being broken open. Sharper knives and a good cutting action damage less cells.

I need plant help. I have an indoor habanero plant that’s 2 years old and nice and bushy. Every time it gets some blooms on it they fall off. They don’t wither or dry up just end up on the floor. I use a miracle grow food maybe every other week that is 24-8-16. Do I need a better combo of nutrients?

Since it's indoors, it may actually be pollination. When the flowers are opened, shake the plant or the branches so the flowers can drop their pollen and pollinate themselves. Without insects and wind, this is very common

Yes, it's great if you plan on canning the recipe. I'll usually toss about 1/8 tsp per quart sized jar for longer-term storage

It’s one Tbsp. for 2 pounds of cucumbers/3-4 pints. The dish with the ingredient shot is small and they spread flat, but you could certainly add more if you wanted to adjust the flavor.

First, consistency of the slicing would be easier if you use a mandolin. These aren't expensive and have many uses in the kitchen whenever a recipe benefits from uniform thickness (e.g. scalloped potatoes, sliced jalapenos, etc.). Second, if you want to mitigate the heat a bit, slice the caps off the peppers, use an old-style ("pointy") potato peeler to remove the core and ribs of the peppers and then use the mandolin to slice them uniformly. These two tips will make it easier to make these tasty pickles.

I guess not. Pretty sure the only reason this happened is because I took your advice on spraying leaves on hot days. -Can anyone help me with my pepper plant? When my ghost peppers change color, they develop colletotrichum. When I cut them open, its all black and fuzzy inside. This makes me really sad. I put so much time and money into these peppers. I promised hot sauces to my friends. It's not blossom end rot. Idk if any available fungicides that are systemic that dont cost 100$ and are available to regular consumers. Is there anything I can do? I've been told it's infected my yard and will remain for years.-

I noticed you didn't say or show anything about WASHING all tools, veggies, hands, surfaces DIRECTLY BEFORE using. Invisible microbes can cause spoilage , illness and even death.😮😮😮
