It sounds good ! My wife loves salmon like yours, me not so much. I have a question about your Bradley smoker, are those smoke pucks only made by Bradley and could they be used to cold smoke in someway like a tube pellet smoker? I have a Traeger 850 and will tube smoke the salmon for an hour before I cook it just to kick up the smoke flavour but those pucks would probably be easier to deal with than pellets

One of the downsides of the Bradley is that you have to use their pucks. Yes, you can cold smoke with the Bradley but it does use a small pencil heater to get the pucks to smoke so it does produce some minimal heat (just like the tube in your Traeger). The pucks give off a lot of smoke flavour, more so and quicker than the pellets. The main difference between a pellet smoker and the Bradley is that the pellet smoker will not hold low temperatures well and the Bradley will not cook at higher temperatures.
