Ingredients (yields 6):
For the Filling:
500 gr Swiss chard, stemmed, washed, and cut into bite-size pieces (about 3 cups)
200 gr (1 1/2 Cups Ricotta Cheese)
1 Small Onion
1 Tbsp Butter
60 gr Grated Parmesan Cheese
Olive Oil
Nutmeg
Salt and Pepper
For the Dough:
250 gr of 00 Flour (or unbleached all purpose)
4 Egg Yolks
1 Whole Egg
1 Tbsp Olive Oil
For the Sauce:
4 or 5 (800 gr) Ripe Plum Tomatoes (or 2 Cans of whole tomatoes)
100 gr of Butter
