Rice has given pride and is placed in the centre of every Iranian dinner table. Of course, there are many ways to cook the rice, however, the correct way (according to us) is by following four steps: soak- boil- drain- steam.
This method creates a rice crust named Tah-dig. This layer of the crust will sit on top of the rice when flipped on the serving plate. It is the part of the dinner table that everyone's eyes are fixed upon. You will be judged if you take an oversize piece!
