【ingredients】
4 eggs
25g vegetable oil
25g unsalted butter
70g cake flour
70g milk
52g granulated sugar
15g honey
1/2t vanilla extract
් Preheat oven at 150℃, line up parchment paper in the 16X16 square tin, prepare a bottle of hot water, and have all the ingredients measured.
① Heat vegetable oil, butter, and milk to 40-45℃ in a pot.
② Sieve flour in ①, mix well and add yolks in, mix until smooth, then add honey and vanilla extract.
③ Beat egg whites and add sugar in 3 batches. Beat until soft peaks formed and keep beating a little more like 1-2 minutes on low speed.
④ Add 1/4 meringue to ③, use a whisk to mix the two mixtures thoroughly, then pour it back into the meringue. Still mixing with the whisk, while before finishing up, you can use a spatula to check the bottom and see if the batter is well mixed.
⑤ Pour the batter into the tin and put it in a larger pan. Add 2cm height hot water in the pan. Bake in the oven at 150℃ for 55-60minutes.
