Ingredients:
Pork belly 300 grams
Shallots half bowl
1 onion
1 small handful of coriander
4 dried shiitake mushrooms
Lard 30cc
2 tsp salt
Soy sauce 50cc
White pepper adequate amount
1 tsp sugar
Directions:
1. Cut the pork belly into strips, cut the shallots into small slices, cut the onion into strips lengthwise, and wash the parsley.
2. Soak the dried shiitake mushrooms until they become soft. Slice, steam them, and set them aside.
3. Stir fry shallots with lard until they turned brown.
4. Fry pork belly and onion, then add shiitake mushrooms. Then add salt, soy sauce, white pepper and sugar.
5. Add water to cover the ingredients and simmer for 30 minutes until the meat becomes soft and tender.
6. Wash rice noodles and cut into short sections. Put them into the wok to absorb the broth, then simmer for 5 minutes.
7. If the rice noodles are not soft enough, add some more hot water and cook again.
8. Add coriander on top of the dish. Finished!
