Greetings Nicolas - try adding a pinch of cream of tartar, or a small tsp vinegar to the mix. It makes the egg stiffer so it doesn't flattern so much and stops weeping

I've lived in an English village, it's like living on a different planet. So calm and peaceful. Where children can be children and neighbors actually visit one another. Quaint shops and travel agencies with great deals around the world. I miss it.

Hi, Nicholas! Meringue was used extensively in the American South for sweet treats. I don’t see it as often these days. When I was a child and went to the ocean to visit my Aunt Catherine, she would bake individual meringues with chopped pecans, pack them in an air-tight tin, and give them to me to enjoy on the long trip back home. My mother made meringue shells and would fill them with vanilla icecream and home made chocolate sauce and sometimes use strawberries instead ( as you did in the video ). Of course we also used meringue as the topper for lemon, chocolate and coconut cream pies. Thank you for bringing back these memories. I think I will make meringue shells this week!

Never water potted plants from the top. Rather,fill the sink with water and sut the pot in the water. It will then soak up the water encouraging the roots to grow down.

When I lived in Australia I recall them considering pavlova their national dessert. An off-set spatula is one of the most helpful (and inexpensive) kitchen tools and would help with spreading the meringue (sp?) and cream. We all need breaks - have a good one.

Australians claim to have invented the Pavlova in 1935 (documented) and New Zealanders around 1928 (undocumented), they fight over this! However, many types of large meringue cakes existed in Europe in the 1700s and what is now called Pavlova was common in German speaking countries in the early 1800s and then in France, U.K. and USA by 1850-60. What differs is the fruit - the English usually used strawberries. By 1911 there were hundreds of dishes named after Anna Pavlova, most of which don’t survive, this is the one where the name stuck. German academics have actually written a huge tome on the history of this dessert! They must have had fun researching it!

We will miss you, but everyone needs to rest. Congrats to your family on your sister's wedding. I hope all goes well. Yeah, I donated all my books that weren't semtamental to me about 5 years ago. A much needed cleanse. Re-building my little library with books of things I am interested in now has been so much fun. I'm more picking these days, but everyone always wants to borrow them. I love your book recommendations. Keep doing them !! I bought everyone you've recommended except one or two because they're not in the U.S.A. yet. I am so obessed with Villeroy and Boch now. They must feel so welcome at your home. I love the care you take with your table settings. I look forward to your videos each weekend but will re-watch some of the past episodes. The meringue should not be cracked all over. Once it is cooked the oven is turned off and the pav is left in the oven until completely cold. It will crack slightly or not at all, and the texture will be better. I also think the meringue should be slightly more whipped so it will be fuller. Just a few tips from someone Australian who has been making them for 45 years 😁 PS oh and a truly good pav needs fresh passion fruit, it’s sharpness balances the sweet of the meringue 🌹

Que idea tan linda y original, regalar un libro y mantenerlo circulando y a su vez llevar un registro de quienes tienen la suerte de leerlo; me recuerda cuando una señora que trabajaba en el mismo lugar que yo me regaló varios libros porque no los quería dar a cualquier persona, me sentí muy importante porque ella considero que yo los leería y los cuidaría adecuadamente ( aún los tengo conmigo desde hace más de 20 años ) Enjoy your break, looking forward to hearing from you soon; hope you have a wonderful time; blessings to you and your family.

Loved today's video as always, everything you do is so elegant, always look forward to what you have to share each week. Your dinner party looked lovely and the strawberry pavlova looked 😋. Hope you enjoy your 2 week break and your sisters wedding goes well. As much as we will miss your video, we also appreciate that you deserve a break and enjoy your time with family & friends. I would love to be the next owner of your book and would be more than happy to pass it onto a new owner with the agreement for then pass it onto another new owner to allow people to share, what a great idea.. x
