Hyderabadi Talawa Gosht Recipe:
Ingredients:
• Mutton (Gosh) - 400-500 Grams
• Tel (Cooking oil) - 1-2 Table Spoon
• Pyaz (Onions) - 2 Medium Size (sliced)
• Hari Mirchi (Green Chillies) - 3 to 4 Pcs
• Dhaniya/kotmir (Coriander Leaves) - (1/4) bunch
• Kariyapak (Curry Leaves) - (1/4) bunch
• Lemon Juice - 1 table spoon
• Adrak- Laison (Ginger Garlic) Paste - 1 Table spoon
• Lal Mirchi (Red Chili) Powder - 1-2 Tea spoon
• Haldi(Turmeric) Powder - (1/2) Tea spoon
• Namak (Salt) - 1 Tsp ( According To Taste)
• Dhaniya Powder - (1) Tsp
• Zeera Powder - (1) Tsp
• Garam Masala Powder - (1) Tsp
• Loung (Clove) - 2-3 No’s
• Elaichi (Cardamom) - 2 No’s
• Shah Zeera (Caraway seeds) - (1/4) Tsp
• Tej Patta (Bay Leaves) - 1 no’s
• Dal Chini (Cinnamon Stick) - 1 inch
• Pani (Water) - 1 Cup
Procedure:
o In a bowl add washed Mutton (Gosht), Adrak- Laison (Ginger Garlic) Paste, turmeric powder, zeera powder, dhaniya powder, red chilli powder and salt and mix it properly and keep it aside for marination for some time.
o In a Pressure Cooker add oil
o When Oil becomes hot, add sliced onions and sauté till it becomes soft and tender (not golden brown).
o Now add Loung (Clove), Elaichi (Cardamom), Shah Zeera (Caraway seeds), Tej Patta (Bay Leaves) and Dal Chini (Cinnamon Stick) and saute it.
o Now add marinated mutton and mix it well, and add water, cook it on medium flame till one boil comes.
o Once it takes one boil, mix it and close the pressure cooker lid and keep it on medium flame to take 4-5 whistles or until mutton gets tender.
o Now open the pressure cooker lid (when its pressure is all gone), and transfer this mutton to a kadai or pan.
o Now cook this on medium flame until the water in it dries and oil starts appearing, by mixing it regularly.
o Once the maximum water dries, add kariyapak (curry leaves) and sliced hari mirch (green chilies) and mix it well.
o Now add garam masala powder and lemon juice, mix it properly.
o The Talawa gosh is ready now, just garnish it with chopped coriander leaves and close the flame.
o That’s it friends Hyderabad famous talawa gosht is ready to serve.
o Serve it with roti, chapatti, paratha, khatti dal and rice.
