####ingredients :
*For Marination:*
- **Chicken**: 1 kg, boneless, cut into 2-inch tikka pieces
- **Ginger paste**: 1 tbsp
- **Garlic paste**: 1 tbsp
- **Salt**: To taste
- **Lemon juice**: 4 tsp
Mix these ingredients and set aside for 1 hour.
*For Second Marination:*
- **Hung curd/Yogurt**: 10 tbsp
- **Turmeric (Haldi)**: ½ tsp
- **Cumin powder (Jeera)**: 1 tsp
- **Garam masala**: 1 tsp
- **Mace (Javitri) powder**: 1 tsp
- **Kashmiri chili**: 8 tsp
- *Kasuri methi* (roasted and powdered): 1 tsp
- **Salt**: To taste
- **Mustard oil**: 5 tbsp
Mix all these ingredients with the previously marinated chicken.
#### Instructions :
1. **Marinate the Chicken**:
- Coat the chicken well with the marinade.
- Cover and refrigerate for 4-5 hours to let the flavors seep in.
2. **Prepare for Cooking**:
- Skewer the marinated chicken pieces, about 4 pieces per stick.
- Arrange them on a foil-lined tray.
3. **Roasting**:
- Preheat your oven to 230°C.
- Slide the tray into the oven and roast for 10 minutes at 230°C.
- Baste the chicken with melted butter for added flavor.
- Reduce the oven temperature to 200°C and roast for another 8-10 minutes.
- Flip the skewers, baste with butter, and roast for another 7-8 minutes at 200°C.
4. **Final Touches**:
- Continue roasting until the edges of the chicken pieces are charred and crispy.
- Remove the tray from the oven once done.
5. **Serve**:
- Serve the delicious chicken tikka as an appetizer and enjoy!
