Today the proposal is to make a dessert that isn't as common where I live, but it's surely a guaranteed success on the beaches of Bahia, Espírito Santo, and Rio de Janeiro, where it's served with a good portion of condensed milk on top. Do you know what it is? That's right, tapioca couscous! Here where I am, it's called tapioca cake. If you're familiar with this treat, give it a thumbs up and let's start this recipe.
Tapioca couscous is a typical delicacy of Brazilian Northeastern cuisine, inspired by the couscous of Arab origin brought by the Portuguese. Prepared from cassava starch, known as tapioca, this recipe has been adapted over time incorporating ingredients such as coconut milk and sugar, becoming a popular sweet dish.
For tapioca couscous, we'll need:
500g of granulated tapioca
4 cups of milk
Half a cup of water
2 cups of sugar
200ml of coconut milk
100g of shredded coconut (to sprinkle on the plate)
1 can of condensed milk, to serve
