Baird's Tapir, the national animal of Belize, is Central America's largest mammal. It's an herbivore, and is equipped with a prehensile trunk which it uses to pick leaves to eat. Though it looks like a small elephant, the tapir's closest relatives in the animal kingdom are the rhinoceros and horse.
