The Kerala sadhya meal is an essential part of Malayalee cuisine. Traditionally served at festive occasions like Onam, Vishu, weddings and the likes, the sadhya on average consists of 25-28 dishes!
In this episode of Gourmet On The Road, Food Lovers’ Editor Kripal Amanna, samples the sadhya at Vembanad, the Keralan Hotel at The Paul. He savours this lavish meal of 28 dishes, each with its own unique character and flavour. The meal celebrates the use of vegetables, fruits, various lentils, spices, yogurt and of course coconut in various forms! He wraps up the meal with 4 varieties of payasams, a traditional dessert from Kerala.
GOURMET ON THE ROAD
NEI PARIPPU
very mildly flavoured. this lentil dish is meant to be eaten at the beginning of a sadhya.
SAMBAR
slightly tangy with the nourishing feel of the vegetables. quite a satisfying sambar!
INJI PULI
the sour hit of the tamarind and warm heat of the ginger in this pickle awakens your palate!
ULLI THEEYAL
the delicious savouriness from the onions plays off the sweetness from the jaggery.
KOOTU CURRY
there’s the earthy texture of the yam with bite of the bengal gram and the slight crunch of the coconut. these veggies are coated in an aromatic, roasted masala.
BEANS MEZHUKUPURRATI
this poriyal of sorts has a nice crunch of the beans with the mild sweetness and gentle crunch from the onions.
OLAN
the coconut milk in this soothes and refreshes your palate. best eaten in between tasting the spicy dishes.
VENDAKYA MORRU CURRY
this yoghurt based gravy has a pleasant crunch from the sauteed okra and the savoury pop of the mustard seeds.
AVIAL
a lovely union of veggies. this avial has the gentle flavour of yoghurt, sweetness of the grated coconut and the crunch of the vegetables. you can taste that drizzle of coconut oil used to finish the dish.
CABBAGE THORAN
this cabbage thoran has a prominent sweetness from the copious amounts of fresh grated coconut. It’s mild tempering allows the cabbage to shine!
KAALAN
the unctuous ripeness of the banana imparts a surprising sweetness to this dish. delicious!
RASAM
you can taste the tartness of the tamarind and tomato and the gentle heat of the peppercorn at the back of your throat in this rasam.
PACCHA MORRU
this buttermilk is thick unlike regular buttermilk. savour this combination of the buttermilk with the rice with kondattam or yoghurt-soaked, sundried and fried chilli!
PARIPPU PAYASAM
the sweetness of this lentil payasam pairs well with the fruity flavours of the banana. the pappadam adds weight and body to your bite.
SEMIYA PAYASAM
this semiya payasam has the toasty notes of the fried cashews and the sweet jammy pop of the sauteed raisins.
PAAL ADA
a traditional malayalee dessert made with rice flakes, has a delicious, mild caramel flavour.
JACKFRUIT PAYASAM
this payasam has the intense, pungent sweet flavour of ripe jackfruit. you also taste the lingering note of ground cumin with each bite.
SADHYA
This vegetarian meal gives one a delicious taste of Kerala, each dish unique and pleasing to the palate. a highly-recommended experience to savour!
