I gave this style of cheese a go in regards to cheesemaking with local raw milk from a local producer where I live milk was milked like a hour before I made the cheese thats how fresh it was so im hoping ill get very close to that raw natural milk flavor a lot of the alpine cheeses have.

Thank you so much, Walter. I’ve tried “Scottish” oatcakes bought locally and they’re a great carrier for cheese. Are havercakes different? Always looking to try something new 😋

@@RufusEatsCheese Scottish oat cakes you buy are nice. There's quite a few different regional variations on havercakes but possibly the most traditional is just oats mixed with water, maybe some salt. There's no fat or milk or anything else (thought there are havercake recipies which use those, probably the most common), so you get the earthy oat flavour but it's less intrusive than with other oatcakes. I think that makes then great for letting the cheese take the lead. I just put some oats in a bowl and spoon in a little water until I can mush them to a dough, then roll it out on some oat flower and put it on a med-hot griddle or skillet until it's cooked and dried. Takes a few minutes to make and not much longer to cook.

I live in Savoie (France) where this cheese is made. I agree with you that the taste is incredible. I don't know if they selll it the same way for you but in france we have 2 kinds of beaufort. The first is called beaufort and is cheaper ( around 15€ for 1kg) and it is the most common one. The second one is called «beaufort d'été» and is more expensive ( 19€ for 1kg and up to 30€ if you buy it from a cooperarive). The taste is stronger with more flavor. If you have the occasion i really recommend this one for a unique experience

Thanks! It’s not always so easy. She used to devour every tomato in the house and then one day came home from school and said she wouldn’t eat them any more 🤷🏻♂️ She likes them again now 🍅

how does Beaufort compare with Reblochon in terms of taste? Thanks! Ae they distinguishable in a blind taste test against other alpines like Comte?

Great question, thanks 🙏🏻 Reblochon is a very different cheese to Comté or Beaufort which are semi-firm alpine style cheeses. Reblochon is a washed rind, soft cheese that can be quite runny. The nuttiness often found in alpine cheeses is often associated with Reblochon, too, but for my palate it’s quite different. Comté is a magnificent cheese, but having tasted them side by side, the Beaufort had a richer flavour with more length. The Comté was a little plain after eating Beaufort. Hope that helps.

Properly made comte tastes like the mountains, you can taste the grass, the flowers the outdoors the cows are exposed to lol it comes across as a brutally honest cheese that tastes like where its from. @@RufusEatsCheese
