Ingredients:
4 cups sliced & quartered red potatoes (small, bite-sized chunks)
½ lb bacon
½ tsp salt - for boiling potatoes
¼ cup apple cider vinegar
4 tsp honey
3 tsp Dijon mustard
¼ tsp salt
1/8 tsp. pepper
1 cup chopped onion
1/3 cup fresh parsley
Directions:
1. Cut 4-5 red potatoes into bite-sized quarters until you have 4 cups
2. Boil water for potatoes and add ½ tsp salt
3. Add potatoes to boiling water and boil until soft when pierced by fork
4. When done, drain off water and set aside to cool
5. Cut bacon into strips ½” to 1 ½’ long and fry in skillet (keep the grease)
6. Sauté onion in bacon grease until soft and transparent
7. Remove from heat and cool
8. Add the apple cider vinegar, honey, mustard, salt, and pepper to skillet
9. Stir well
10. Simmer on low heat for 3-4 minutes and continue stirring
11. Remove from heat and gently fold in the potatoes - making sure the pieces all absorb the sauce
12. Add bacon, fold in; add parsley and gently fold into the mix
13. If needed, cover and heat on very low heat before serving hot
14. Serve hot
