K. N. Vasudeva Adiga’s Paakashala chain of restaurants may be relatively new, but those in the know speak volumes of his and his family’s culinary legacy that spans decades. Son of Shri K V Nagesh Rao and Smt. K N Saraswati of the iconic Brahmin’s Coffee Bar, a young Vasudeva Adiga chose to forge his own path in 1984 thereafter establishing a string of successful South Indian eateries. His relatively recent venture, Paakashala, although only a few years old, has amassed for itself a solid reputation built on “his promise” of serving tasty vegetarian fare with an eagle-eye focus on hygiene. Exactly what I discovered when I ventured out to their Mangalore highway outpost at Yediyur, a 100-kilometre drive from Bengaluru.
