Pineapple and grapes sweet curry
Ingredients
Pineapple- 1 kg
Grapes - 1 large hand full
Grated coconut - 1 cup
Jaggery - 3 or 4 cubes
Turmeric powder - 1/2 tsp
Red chilli powder - 1 tsp
Salt- 1 tsp
Ghee - 1 or 2 tsp
Method
Cut away the outer peel of the pineapple and set aside.
The pineapple should then be cut into small cubes and set aside.
Heat water in a pan and add jaggery cubes.
Boil them well.
After removing from the heat, set aside.
Heat oil in a pan and add grated coconut.
Sauté till they become a light golden brown.
Take off the heat and set aside.
Take a pan and add chopped pineapple.
Add turmeric powder,red chilli powder and salt
Then add some water and mix them well.
Then, heat the pineapple mixing pan.
cover and cook them well.
Drain and set aside the boiled jaggery water.
Remove the lid and check whether the pineapple is well cooked or not.
Take the pan off the heat and set it aside.
The cooked pineapple should then be ground into a smooth paste and set aside.
Set aside the grapes after thoroughly rinsing them.
Heat a pan and add jaggery syrup.
Then add a smooth paste of pine apple.
mix and boil them well.
Then drizzle with ghee and thoroughly combine.
Then add the roasted coconut mix and combine them well.
Add the cleaned grapes and mix them well.
Cook for 6 to 7 minutes.
Remove from the heat and set aside.
Serve the delectable pineapple and grape sweet curry alongside meals.
