Melt in the mouth Irish Scones
Ingredients
All purpose flour - 300g
Butter(cold and cut into small pieces)- 90g
Finely granulated sugar - 60g
Baking powder - 2 1/4 tsp
Raisins (optional) - 1/2 cup
Cream - 180 ml
Egg - 1
To be served with
Jam/butter/cream
Method
• Take a large mixing bowl and add all purpose flour ( cold), butter ( cold ), baking powder,sugar and raisins.
• Mix all the ingredients with clean hands or a pastry cutter until it turns to a bread -crumb like texture.
• Whisk the egg and mix it with cream & vanilla.
• Create a well in the centre of the dry ingredients in the bowl and add the cream n egg mixture.
• Mix everything well and knead a medium soft dough.
• Put the dough on a platform dusted with some flour.
• Pat it with hands or with a rolling pin into a 1.5 to 2 inch thick disc.
• Use a cookie cutter and cut out roundels.
• Arrange them as shown,on a baking sheet/ baking dish lined with butter paper.
• Brush the roundels with some cream n egg liquid mixture which is usually left at the bottom of the vessel.
• Bake the scones for 18 to 20 minutes in the oven preheated to 190°C.
• The top turns golden brown when done.
• Cut the scones into halves and relish them with clotted cream ,butter or strawberry jam.
