But let’s be real, these cookies are super cute, super tasty, and my niece and nephew love them which is reason enough to give them a try.

🥣 Ingredients
1 cup Butter
1 cup Icing sugar
1 Egg
1 tsp. Baking powder
1 tsp. Salt
1 tsp. Almond extract
¾ cup Almond flour
2 ¾ cup Flour
Whole almonds
🗺 Directions
In a stand mixer fitted with the paddle attachment, beat the butter and icing sugar. Add the egg, baking powder, salt, almond extract, and almond flour. Scrape the bowl as needed. Slowly start adding the flour while using the mixer, then continue by hand.
Once the dough reaches a firm consistency, divide it as needed, securly wrap it, and let chill in the fridge for 30 minutes. Taking one disk at a time, roll out your dough on a floured surface and cut out teddy bears. Place on a pan lined with parchment paper. Gently place a whole almond in the center and fold the arms over it. Bake at 325°F for about 18 minutes.

🌟 Review and Tips
1. If you don’t have almond flour, you can use ground almonds… they are basically the same thing
2. When wrapping the almonds in the bear’s arms, it will be a lot easier if you use bigger almonds, or if you have smaller almonds, angle the almonds a bit!
3. The arm wrapping part was a challenge for me, the cookies are just as cute and delicious if you skip this step
4. Do your best to roll them out to the same thickness, you don’t want some to overcook!
5. Almond extract has a very strong taste. If you double this recipe I would suggest not doubling the almond extract!
