These sweet stuffed puris are a traditional Mauritian delicacy, often made for festivals like holi. The filling is made with ground channa dal flavoured with fennel seeds and cardamom. It's very delicious with some hot chai :)
Ingredients
Filling:
1/2 Cup Channa Dal (Dal Gram)
1 Teaspoon Salt
1 Teaspoon Fennel Seeds (Gros Lani)
1/4 Teaspoon Cardamom Powder (Elaiti)
2 Tablespoon Desiccated Coconut (optional)
1/2 Cup Sugar
1 Litre Water
Tekwa Dough:
2 Cups Plain Flour
1/4 Teaspoon Baking Soda (Bicarbonate)
3 Tablespoons Milk Powder
2 Tablespoons Ghee
Yellow Food colouring
3/4 Cup Water
Oil for Deep Frying
