When I started backing my heat down to heat up the pot, my likker got better each time I used less heat. That made the most difference of about anything I've done to make it better.

I also put malted corn in a jar and covered it with water 5 days ago. It smells incredible, just like silage!! Always loved that smell, it's definitely going to be my next sour mash without doubt

I normally put 1/2 gallon of high shots in my 10 gallon thumper. I may try it dry this weekend. I have 1st generation of my soured corn/sour mash working off, should be done tomorrow......maybe Sunday

Just found your channel John. You're livin the life! I'm a home stiller transplaned Okie callin home in hothouse N.C. now. Love the show. Have you ever used roasted rye? It smells great. I get it up around Murphy. Haven't tried it yet. 2023 gonna be a good year for us country boys.

I never knew that cold water 💦 made a difference. I use distilled water to temper. Going to a big spring around here makes me feel uncomfortable. I have done it before many times but I have quit here lately. Lots of Hispanic people fill jugs up their too. So it’s not like I’m the only one but anyway. If I run mine slow it gets high proof like 178 up to 190. But flavor seems to go away. Of course I’m running a 4 jar thumper setup. Distilling it 5 times at once.

Hey man, I appreciate you! I'm excited. I just rebuilt my still to stream line the flow, and started learning about casting to make my own fittings, fun stuff! Right now I've got 5 gallons of rhubarb wine that needs another week to finish up, then we're going to run it. I've made it before, and it's definitely worth doing if you're interested in trying something that isn't grain based. I personally save the first half pint to start my bbq and throw out my last half pint. Then I mix all the rest together and call it my final proof :) About 3/4 gallon at 140 proof is pretty good. I love the stuff, no headaches or hangover. Wake up the next morning feeling great, can't get much better than that. Have a nice day.
