The restaurant we asked to photograph this time is Senjutei, a Miwa somen noodle store in the birthplace of somen noodles.
We had the opportunity to photograph the behind-the-scenes of the shop, from the meticulous preparation of the noodles to the somen factory, which you cannot usually see.
It was very interesting to see how dozens of kilograms of wheat are gradually stretched to produce thin, 1 mm somen noodles as time and processes go by. I was amazed at how the somen noodles made at the factory tasted completely different from the ones served at restaurants and eaten at home. The store is so famous that even the locals do not know its name, and on this day there were so many customers who came to eat with their families and friends. who know all about somen noodles, were truly delicious.
