I enjoy your channel. Many of them I would like to print the recipes, but I can not. Please start showing the recipes so I and I'm sure many others can print these valuable recipes. Thanks again.

This is so cool, first time viewer here and I’m impressed! Is there a way to make these shelf stable like the Jack Links nuggets?

I always stock up when that stuff goes on sale, though the sale price is what the regular price was just months ago.

How do these turn out without sugar? Would they still be tender?
@AgeofAnderson

They will be less tender, but you could tenderize before curing or increase the cure time a bit to help with that.

In your calculation 3600 x 0.0275 = 99, the mix would be 2.678% salt. For the mixture to be 2.75% salt you would need to add 101.8g of salt ( (3600 x 0.0275) / (1 - 0.0275) ) Doesn't matter, but I know you're careful with cures
