Teochew Braised Duck 潮州卤鸭 Chinese New Year Foods 新年年菜
Hey everyone, welcome back to this week's episode of g8stromania. For this week onwards, we are going to start a series on Chinese new year, 8 dishes until CNY! For this episode, we are going to showcase Teochew Dish, Braised Duck or 潮州卤鸭.
For this dish you will need the following ingredients:
1 duck
60g galangal
10 garlic cloves with skin
2 dried licorice
1 Cinnamon stick
2 star anise
10 cloves
Small amount of sichuan peppercorn
3 tbsp of sugar
4 tbsp of dark soy sauce
1 tsp salt
900ml water
Steps:
1. Fry sugar and caramelise
2. Add dark soy sauce and fry till fragrant
3. Add 900ml water and boil.
4. Add duck and braise 1.5 hrs, 15 mins each side.
5. Remove duck.
6. Add Taukwa and hard boiled egg and braise
7. Serve.
