Just amazing. I can't thank people like you enough for sharing these wonderful recipes and ingredients from you culture. I made this tonight (as sandwiches) and I can't believe how much flavor such a simple dish can have. I didn't have the mayo, but I decided to go ahead and look up the recipe, and it turned out I had all the ingredients to just make it from scratch. Put it all in a blender, slowly added the oil, and that was that (now something else I won't buy from the store when I can just make it from scratch). Thank you again and I am adding this so I can make it again and again.

Wow! I'm so glad I found you this morning while I was in the kitchen enjoying a cup of coffee, I always love Japanese food as I've been to Japan very long time ago and since then until today i never lost this love for it. Another great recipe, Marc! A problem here in the States is that we almost never see skin-on boneless chicken thighs in the markets. I wonder if you could spend a few moments in a future video showing how to de-bone a chicken thigh? I can always get thighs in the market. I've been doing it for more years than I care to mention, but newer cooks might appreciate learning how. And I always learn something new when you demonstrate a technique!

Thanks Kathy, and great point! The challenge here is that it's pretty difficult to find bone-in thighs. The only time they show up in regular supermarkets is around Christmas time, so I'll try and time my next chicken recipe for the holiday season😆

I agree! Our boneless thighs have no skin. Such a flavor loss. I’m terrible at deboning chicken. I’ll add oil to sauté the thighs. Your recipe looks wonderful Chef Marc!!! 👨🍳 thank you 🙏🏻

Try toasting the buns first, it'll make it easier to cut

Thanks for the tip, but the buns I used in the video were toasted. The issue is that the chicken teriyaki has a very slick surface from the starch coating and sauce, and once the yolk bursts, it provides additional lubrication so the sandwich falls apart. If you really want to cut it in half, I'd recommend sticking a few toothpicks in either half of the sandwich to hold all of the fillings in place.

Thanks Mitchell! I've had a few requests for that one but I need to figure out a way to shoot it. It's a tough one because the gelatin will start melting on contact with the rice and won't look nearly as attractive as in the anime.

I used to use white wine until I watched Marc's series on sake: kzitem.info/news/bejne/pGimnIGEbXeHmHY The difference in taste is astounding! I think it's worth seeking it out. Now I use it constantly in my cooking; I've even combined white wine and sake with fabulous results.

Check out Kathy's excellent response, but the short answer is that white wine is not a good substitute as it doesn't taste like sake and is missing the key components that is the reason for adding sake in the first place.

@@edwardbernthal160 It's been a few decades since I've been to Denmark, but I remember having sake in Copenhagen. Try checking online. A quick google turned up this site: kita-sake.com/en Sake is such a core component of Japanese food, it will be difficult to make a lot of dishes without it. You can store it in the fridge to prolong its shelf life if you don't plan on drinking it.

Just a suggestion that thumbnail is really overexposed, makes it less appatizing to look at. The better the thumbnail looks the more clicks you'll get :)

Thanks Nick, it was actually deliberate. It wasn't overexposed, but I shot it on a white background to isolate the sandwiches. But it clearly isn't doing as well as the usual style of thumbnail so I've switched it back.

oh my, I like the idea of making teriyaki chicken thighs into a sandwich. I might update my process and grill it on this tabletop grill as I'm a big fan of grilling on charcoal. so one extra layer of flavors will be locked into this awesome sandwich.

Great idea! You probably won't want to use starch if your'e doing it on the grill through, and you'll want to reduce the sauce to a syrup and brush it on the chicken towards the end in several coats.
