Hi, I got ahold of a vintage tetsubin from an estate sale. It doesnt have glaze on the inside and is supposedly made in japan from the 1950’s. Do you have any resources where I can find out if its authentic? Also, thank you for the information in the video.

After days of searching online, I found that your video addresses most questions I had! Thank you! May I ask, why will brewing tea in an uncoated kettle ruin the kettle? I am trying to avoid having two kettles as I am a minimalist. I want the benefit of water/tea that has been in contact with raw iron. Is there really no way around needing two separate kettles (one uncoated kettle for boiling water and a separate coated kettle for steeping)? Lastly, can you recommend a place to find an uncoated kettle online? Thanks again and God bless.

Shalom thank you 🙏🏼. And as far as boiling tea in the kettle it may not ruin them but I know the only time that is really ever done is when you are cleaning or restoring a kettle boiling tea may help eliminate some rust.

Also I would say this method of brewing definitely needs the “tea pot” for seeping. Also any handmade “tetsubin” is not made to have tea placed inside only for boiling water. Leaving tea seeping in a kettle with raw iron will cause a reaction and cause the tea to come out very black and probably tasting a lot like iron. The tetsubin is only made to boil water. (Unless it is enameled inside and comes with a strainer, however you cannot boil water in those you can only seep tea, so in most if not all cases any kettle with enamel or any type or coating inside is not really a “tetsubin at all” and will not impart very much if any iron into the water.) hope this helpZ

And as far as not needing 2 kettles. This is important, only one the “tetsubin” is a kettle, the clay piece is the “teapot”. Two different things. If you wanted to avoid having to use the teapot. You could just get the tetsubin boil water in it and use if to add water to a tea bag in a mug for example and you would still get the iron that way. But definitely not supposed to seep tea in the uncoated tetsubin.

Thank you for this video. I have a Tetsubin I'd like to refurbish. Do you know any resources for this (you'd think it would be easy to find, but my impression is most people don't actually know what they're doing and are giving poor advice). Also, you mentioned the name of the glaze/protective coat on several of the kettles. I can't parcel out how to say/spell that word. Would you spell it for me so I can look it up? Great video, thanks! Beautiful tetsubins you have. 4:00 You say that putting tea leaves inside the tetsubin might ruin it. Can you explain why that is? I get that a tetsubin isn't a teapot, but I didn't think it would be harmful to the pot to put tea leaves in.

Yes from what I understand the tea leafs have a certain reaction with the iron. I have been told that if a tetsubin needs to be restored that you can boil green tea leaves inside to help coat the tetsubin and remove rust, but to only do this if necessary. Also the iron of a Tetsubin is very porous and could possibly absorb tea flavor over time.

I have an infrared burner that I got for my tetsubin. I'm told it's not supposed to be put on too hot, but im not sure what temperature that would be. I have been measuring the temperature with a laser thermometer, and the bottom reads from 250-350f, while the middle is around 160. Do you have a recommended temperature setting for infrared burners?

Hi J yes it should be able to take quite a bit of heat as long as there is water in it. Can I ask you what burner you are using? Also what type of tetsubin and size in liters? Also tetsubin maker? Another question with the temperature setting you are using about how long does it take to boil it full of water?

@@ugstudioz5044 it's the Cusimax infrared 1200W. You can find it on Amazon. The tetsubin has a more ovular/cylinder shape to it compared to it from yours. I don't know who the maker was, the owner of my local teashop said he bought it back in the 90s on his trip to moroika japan. It came with a little tag that certified it was handmade in Japan (originally written in japanese, I translated it with google). The burner doesn't have an exact temperature setting, just a dial numbered 1-10. When at 1, the temp reads 230-250f on my laser thermometer, so I keep the dial a little before the 1 so it's about 200-210f. It took about an hour and a half to get the kettle to the temp I needed it at (195f), so that's a bit tedious Edit: it also can hold 1.6 liters. I only put in about 1 though

You should Be fine just ALWAYZ make sure you have a descent amount of water when boiling. I would say at least halfway filled

Hi Daniel. You probably would not want to boil herbs inside the kettle. But could use it to first boil the water then add the boiled water to the herbs. If you wanted to boils the herbs in the water for a while your best bet is probably a pot. Hope this helps.

a few corrections. 1. on pronunciation, its not "you ri she" but "oo roo she" as in "urushi" also, in "tetsubin", the emphasis is on "tet" rather than "su" and the "i" in "bin" makes a long e sound 2. tetsu means irons. so your clay kettle is not a "tetsubin". In english you would just refer to it as a kettle 3. you will not ruin a kettle by adding tea into it. Though, you are right that it can be used as a means to deal with rust.

It's there so you can cook acidic ingredients like tomatoes for example. Without enamel your meal would get a strong metallic flavour.
