That was an awesome video! Had my mouth watering while you were slicing through those briskets!! Bravo brother!! When I tried wrapping my briskets some time ago, I never looked back! I always wrap. Same great taste in a shorter period of time. One trick I learned, when you remove the wrapped brisket from the smoker, burp the wrap. Open the wrap just a little to let the brisket take a breath for about a minute. I have found that this sets the bark. Don't understand why, but it works. Then close it back up and put in the Cambro!! Great job Ron!!!

Oh yeah get it Ron personally like the wrap method but have gone without especially when bark is not as good as I like. Really enjoyed this experiment and certainly both looked delicious.

unwrapped bark was beautiful! I've never tried any lump charcoal before in any of my cookers, but i'm thinking of giving it a try next time I cook in the WSM!

What was the total amount of cooking time for both?

9 hours wrapped, 11 1/2 hours unwrapped. The wrapping saved just over two hours, though, I have had it take even more than that sometimes. Each brisket cooks differently.

old post I know... neer did a brisket , not sure if i should wrap or not ( i lean towards no wrap on most things) was there any crunch to the bark on the wrapped?

Absolutely. Just wait until the bark is where you want it before wrapping. There is no rule that says that it HAS to be wrapped at 165. Wait until the bark is dark before you wrap.

Two things. First of all I'd like to see you do one on the Egg. Second, I thought you once told me not to wait until 203 to pull the brisket.

Hey Tony, I definitely see a BGE Brisket in the future. So what we probably talked about is that 203° is just a guideline. It's done when a probe slides in and out with no resistance. That could be 198 or I once had a brisket that didn't finish until 210!

Haha, fair enough. Tallow is rendered down beef fat. It is great for frying and cooking with.
