HOMEMADE THAI CURRY VEGETABLES
Here is a simple recipe for Thai Green Curry with Vegetables:
Ingredients:
- 2 cups mixed vegetables
carrots, green beans, baby corn, broccoli,
pokchoy, zucchini
And Thai basil, lemongrass,Thai fresh chilly, lemon leaf,Thai ginger,pi brinjal )
- 2 tablespoons vegetable oil
add Thai basil, lemongrass,
Thai fresh chilly,
lemon leaf,Thai ginger,pi brinjal
- 2 tablespoons Thai green curry paste
- 2 cups coconut milk
- 1 cup water or vegetable broth
1 aromat powder tablespoon
- 1 tablespoon lime juice
- 1/2 teaspoon ground black pepper
- Salt, to taste
- Fresh Thai basil leaves, for garnish
Instructions:
1. Heat oil in a large saucepan over medium heat.
2. add Thai basil, lemongrass,Thai fresh chilly, lemon leaf,Thai ginger,pi brinjal sauté for 1 minute.
3. Add the curry paste and cook for 1-2 minutes, stirring constantly.
4. Add the mixed vegetables and cook until they start to soften.
5. Pour in the coconut milk, water, and lime juice.
6. Bring the mixture to a simmer and cook until the vegetables are tender.
7. Season with Aromat powder and salt to taste.
8. Garnish with fresh Thai basil leaves and serve over rice or noodles.
You can adjust the amount of chili peppers in the curry paste to suit your desired level of spiciness. Enjoy!
