Looks so awesome! When I was in the Air Force, many of our older squadron mates had been stationed in Thailand during the Vietnam conflict and consequently had Thai wives. We would regularly enlist these ladies to cook their traditional Thai food for party's we often had. Their green curry, and Pad Thai and especially their Thai beef salad were some of the best food of my life! Love to Thailand, their wonderful people and their most amazing food!

This is one of my favorite youtube recipe of all time! I made it 3 times now (with all made green curry paste) and it is by far the best green curry I've eaten ever! This is the only recipe where I see to boil the green curry paste and the chicken in water without any coconut cream and it makes all the difference ! Thanks a lot to you and you mother in law !

I lived in Thailand for a decade. I'm not here to tell you or any Thai person that in Thailand authentic means mom to mom recipe of otherwise a national dish. 10 years ago when I was living in LA I used to go to a place in Thai Town called Surmitt Thai (I believe I spelled that right). They had authentic red and green curries that tasted like nothing I've ever had before. Super spicy, chunks of coriander root in the green curry, Thai eggplant, lime leaves, etc. They had fish ball green curry as well as a super hot catfish curry of some kind that I loved to eat but would wreck my stomach. Thanks for the great show of my favorite food!

I can only agree with you. The best green curry I've ever eaten was in Thai Town, LA, not even in Thailand itself. The vid is great though and inspires me to cook green curry at home. ;).

I love your home cooking / food videos.home cooking is always the best .my mum's cooking doesn't have measurements either & it isn't written down either ,it's just by eye ..Ive learnt to do the same ..but I'm.still learning ..practise & experience is the best way.i also prefer not to buy pre made pastes..thank you for sharing & showing how to do it from scratch.im from Italian heritage but Thai food is also my favourite the fresh flavours are amazing & the natural herbs & spices have many health benefits.thank you 🙏🌿🌶️🥬🧄🍆🫑🍲🥗

Just made it, my first time cooking with fresh galangal - was great. I added a bit too much water as I boiled a whole chicken first then de-boned it...so had to add a little paste in the end to beef it up, but my wife says it was the 3rd best curry shes ever had. Honoured. Thanks man!

• Coconut milk: Coconut milk has the liquid consistency of cow's milk and is made from simmering one part shredded coconut in one part water. Coconut milk is the basis of most Thai curries. • Coconut cream: Coconut cream is much thicker and richer. It is made from simmering four parts shredded coconut in one part water. The cream that rises to the top of a can of coconut milk is also considered coconut cream. • Cream of coconut: Cream of coconut is a sweetened version of coconut cream, and is often used for desserts and mixed drinks. Because of the added sugar, it is usually not interchangeable with coconut cream.

blitz it real quick then a lite pounding, this and pineapple fried rice is the aroma of phuket. dont know if the pineapple fried rice is proper thai or just a tourist spin dish, but it was so good.
