I cannot recommend this recipe highly enough. I’ve made so many of Marion’s recipes and they’re all fantastic, but the balance of flavours here is spot on. So good!

Thanks for the recipe, Marion. I'm Thai and crispy pork belly is something that I absolutely love, but never get to make myself since it's so much work. Your version looks so simple, and I can tell that it's just as good as with skin on. Can't wait to give it a try!

Fagan I hope you enjoy my version! As you said...it’s so labour intensive to make traditional moo krob at home. So this is a good compromise. Let me know what you think if you try this one out!! 😊

Marion, what is this kind of basil called? If I can find the seeds, I can grow them in a pot, like I've done the usual basil. Love Thai food - your recipes are easy to follow.

It's called 'holy basil' or 'hot basil' or 'spicy basil'. In Thailand it's called 'bai grapao'. Definitely worth seeking out the seeds and growing it yourself. It grows every easily like normal Italian basil :-)
Wonderful! I would use Josh Weismann’s crispy pork belly recipe to avoid the deep frying…but that’s 3 hours long…either way, can’t wait to try this

It is the same cut of meat. What makes a pork belly bacon is the curing and smoking process.

Try golden mountain sauce, oyster, soy, sugar, chilli, basil, garlic, onion and dash of water when it dries out so it's not too dry and Thai seasoning, which is similar to msg seasoning. This evaluates it and is what it's supposed to be like in traditional terms. In regards to belly you can dry out the skin and cook the skin on the pan till it's crispy then cook the meat part in the oven (cover the skin with foil) This dish with chicken is also amazing (mince or thigh)

I have searched and searched in the US but can’t find anything equivalent to the Thai “spur chili”. At the Hispanic markets, I can find all kinds of of dried chilis (pasillas, chipotle, anchos, cascabels, japones, Anaheim’s, arbol,) and fresh chilis (jalapenos, serranos, Anaheim’s [green], habaneros, scotch bonnets, poblanos and, of course, bells). Does anyone know what I should be looking for?

That cant be called crispy pork or moo krob if you cut its skin off. I am Thai. However you have a really good bird eyes chilli. That's proper Thai chilli

Oh no, you've misunderstood....what I meant was that this was not moo krob. You'll notice I say that in restaurants they would use moo krob but we are just doing crispy deep fried pork belly. And I am half Thai and I live in Bangkok. But having experience with living overseas and not being able to readily buy ingredients like moo krob, inspires me to try to make recipes that help people to get a similar experience :-)

Yes, can use chicken, shrimp, etc.. It's actually a bit easier b/c you don't have to cook the meat first the way that you do the pork belly, unless you prefer that the protein be crispy. Otherwise you add the meat after the chili and garlic mixture. Look up pad krapow gai for instructions.

I personally wouldn't as it will have a different flavour. It's the fresh basil that gives it the distinct taste.
