Feel free to alternate the proteins in this recipe. But keep the KEY ingredients - pineapple, bell pepper, Thai basil, curry powder, and fish sauce.

IMPORTANT- dry and “old” rice make good fried rice. Use leftover rice, put it into refrigerator for a night. Do NOT use fresh rice which is steamy out from the rice cooker.

Ingredients:
2.5 cups uncooked rice, cook and refrigerate for a night
½ cup golden or black raisins
1 cup of pineapple, cut into bite size (fresh or canned)
1.5 cups of bell pepper, any color
3 cloves garlic, minced
1 onion, diced
1 shallot, minced
Handful of Thai Basil leaves
1lb of shrimps, peeled and deveined
½ skinless chicken breast, thinly sliced
3 eggs
4 teaspoons curry powder
Corn starch
Sesame oil
Salt
White or black pepper
Sugar
Fish sauce
Oil
