I know many of you are feeling the holiday bug, however, since we are not able to travel in the meantime, why not have a taste of Thailand, right in your own homes? This is a fairly simple and fuss-free recipe that anyone can definitely wing (even if you can't cook)
For those who don't know how to handle fish, please ask your fish handler to do it for you at the market to make your life easier!

Ingredients:
Serves 2-4
1 whole fish clean and gutted, 800g-1200g
1 lemon grass, sliced
1 celery stick, peeled and sliced
Dressing
4tbsp fish sauce, or to taste
4tbsp sugar, or to taste
Juice from 2 whole green lime
Handful fresh cilantro, coarsely chopped, keep some aside for garnish
4 red chili padi, sliced
1 clove garlic, chopped
Lime slices for garnish
How to check doneness of fish
1) Use a chopstick. If you are able to poke through the thickest part of the fish easily, it is ready.
2) If you are able to remove meat easily from bones, it means it is ready.
