Cattle Drive Casserole
Ingredients
1 package Cheddar-Bay Biscuit mix (such as Red Lobster)
3/4 cup water
2 lb. ground beef
1 finely chopped onion
1 packet taco seasoning
3/4 cup mayonnaise
3/4 cup sour cream
1/2 tsp salt
1/4 tsp pepper
8 oz. pepper Jack cheese, shredded (2 cups), divided
8 oz. sharp Cheddar cheese, shredded (2 cups), divided
1 can Ro-Tel
Directions:
Preheat oven to 350°F. Lightly coat a 9- x13-inch baking dish with cooking spray. Stir together biscuit mix and seasoning packet with water in a medium bowl. Spread into baking dish.
Bake in preheated oven until just starting to turn golden brown, 10 to 12 minutes. Remove from oven and set aside.
Cook beef in large skillet.
Add onion, stirring occasionally and breaking beef into small pieces, until beef is cooked through, and onions are starting to soften, about 3 more minutes. Drain.
Add Ro-Tel.
Add taco seasoning and 1/8 cup water and stir to combine. Remove from heat.
Stir together mayonnaise, sour cream, and salt & pepper in a medium bowl. Stir in 1 cup of the pepper Jack and 1 cup of the Cheddar.
Assemble casserole:
Spoon beef mixture evenly over par-cooked biscuit in baking pan.
Add cheese mixture:
Spoon mayonnaise mixture over beef and gently spread to cover.
Sprinkle evenly with remaining pepper Jack and Cheddar.
Bake until cheese is melted and starting to turn brown in spots, and mixture is bubbling around edges, about 30 minutes.
