Each category of knife steel is different. The mix of elements within the steel and the way the steel is made will change the properties of that steel. The four properties of steel are toughness, edge retention, corrosion resistance and sharpenability. The properties are how we compare one knife steel to another. If you learn a little about the four categories, and the most common steels within each of them, you will never buy an overpriced knife again. Knowledge is power.
