Strawberry Sparkling Mocktails
1 lb frozen or fresh strawberries
1/3 cup lemon juice - about 6 lemons
8 cups sparkling water
¼ cup coconut sugar, optional
Place frozen strawberries in a microwave-safe bowl. Microwave on the defrost setting until the strawberries are thawed but still cold.
If you don’t have a microwave, place strawberries in a saucepan and melt over medium heat. Stir occasionally. Remove from heat once strawberries are soft and slightly thawed but still cold.
Add lemon juice to the strawberries (and sugar if using) and blend all together with an immersion blender, traditional blender or food processor. The strawberries should be mashed and slightly slushy.
Pour about ¼ cup of strawberry mixture into each cup and top with 1 cup of sparkling water.
You can also pour all of the strawberry mixture into a pitcher and top with 8 cups of sparkling water to serve at a party.
Mixed Berry Green Tea Virgin Sangria
6 green tea bags
4 cups water
1 tbsp honey
2 cups chilled white grape juice
2 cups chilled passion fruit juice
2 oranges, segmented
6 key limes, halved
3/4 cup blueberries, halved
3/4 cup sliced strawberries, sliced in thirds
3/4 cup blackberries, halved
Brew tea bags in boiling water for 3 minutes. Remove tea bags; stir in honey. In a pitcher, combine brewed tea with the remaining ingredients, Chill in the fridge for 2 hours or more. Pour into glasses and enjoy!
Banana Split Greek Yogurt Pops
1 cup chopped strawberries1/2 cup chopped bananas1/2 cup chopped pineapples1/2 cup chopped cherries2 cups plain Greek yogurt1 tbsp honey1 tsp vanilla extract1 scoop vanilla protein powder (optional)1 cup semi-sweet chocolate chips1-2 tbsp coconut oil1/4 cup crushed peanutsAdd the chopped fruit, plain Greek yogurt, honey, and vanilla extract to a large bowl. Combine thoroughly.
Add a couple tablespoons of the yogurt mixture to a parchment paper lined baking sheet to form a slight mound then add a popsicle stick. You can also add this mixture to a bar candy bar mold if desired.
Place the baking sheet or mold in the freezer. Freeze until they are completely frozen, about 2 hours.
When clusters are done in the freezer, melt the chocolate. Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave in 15 or 30-second intervals, stirring in between each one, until the chocolate has melted.
Remove the frozen yogurt bars from the freezer and dip one side into the melted chocolate. Place bars on the baking sheet. Drizzle with more chocolate and add crushed peanuts.
Place the clusters back in the freezer for a few minutes to allow the chocolate to set. Enjoy!
