Being Japanese it is nice to see this lobotomy method finally reaching N. America. The meat also doesn't spoil as fast due to the adrenaline being cut off from the brain to the meat. BTW for Ikejime assistance correction, it is pronounced ee-kay gee-may. ;-)

@@peelthereel as noted the spine tool severs the nerve connections to the meat from the spine and stop adrenaline from being released into the muscle tissue of the fish. In the video you said it releases the toxins in the fish. Toxins can not be released from the fish. Just an FYI. Love your videos👍🏻

@@jeremyb5198 you don't need the tool, you can just use a knife, and if you really want to for sashimi or better quality meat, use fishing line and wiggle around in the in the spine. The tool is just for efficiency/ease of use. I prefer that as to smacking it in the head as it feels a bit more humane.

Just as a small heads-up, the bonking doesn't actually kill the fish, it just gives it a concussion and basically makes it unconscious for a while. To see if it's been bonked properly, rotate the fish on it's side, the eyes shouldn't move. A non-concussed fish will try looking along a horizontal plane, so the upwards facing eye will turn downwards. If the fish does that, you need to bonk harder. Then you cut the gills and let it bleed out. And just for the added somewhat useful trivia: If you want to fish in Germany, you need to get a fishing license, including a process that teaches you about fish, nature and animal conservation and the relevant laws. One of such laws is how to kill a fish you have caught. Yes, you are required by law to bonk-and-bleed fish you have caught.

You're wrong. The bonking squishes the brain causing quick and irreversible brain death for obvious reasons. If your fish is looking around, you didn't hit it hard enough to scramble the brain. Imagine a rock the size of your car falling on your head, that is what you're going for. Instant and undeniable.

@@vonzi123 just make one out of hardwood the width of the interior of your tacklebox. i coated it in boiled linseed oil to prevent staining, and it makes it water resistant so i can clean it on site in the water. put a grip on it, and keep it with you. not that hard. one strike and the brain is soup, most effective and reliable way if you truly care about the fish suffering. nothing with a brain consistency of soup has the capacity to feel pain. i've seen this be too effective, and the brain eject through an opening in the top of the head. it's your own fault if you want to use a water logged stick.

Brain spike kills, and keeps the brain from releasing adrenaline, it also stops muscle contraction which releases lactic acid. As does "pithing" -Ikejime tool, you can also do it from the tail. Ikejime is 4 steps 1. Brain spike 2. 3 cut exsanguinate both gill arteries and tail artery. 3. Pith 4. Ice bath (important- keeps proper temp, also helps remove more lactic acid out of the flesh.) Man catfish are hard to kill. I definitely don't agree with fileting them alive but I've seen people beat those fish over the head hard enough to kill a person and the fish is still alive.

That’s barbaric. Truly disrespecting the animal at that point. It’s feeding you, at least give it a quick death. That’s why with lobsters I won’t eat them if they have been boiled alive rather than having their head split then boiled.

Ikejime also prevents the fish from entering rigormortis which keeps the meat more supple and less prone to tearing

How would it do that? Riger mortis is when the muscle cell doesn’t have enough energy (atp) to separate the actin from the myosin so they stay stuck together and stiff. I don’t see how destroying the brain and spine would stop that process. Once the muscle isn’t supplied with oxygen and atp it’s going to go into rigor mortis.

@@gooddoggo2258 it does not completely eliminate it but it delays the onset by 10-20 hours. this is well documented by the japanese who demand high quality fishes for high-end sushi and allows more time for high quality fish to reach the table in the best state. i dont know the exact science but I'm sure you can google it to suit your curiosity

Totally agree with you. If you are taking the time and effort to fish, respect the fish, respect nature and don’t be a jerk. I stopped catch and release fishing for the most part. If I’m fishing, I have my cooler and I’m keeping what I catch because I plan to eat it. There are a few species I can’t eat or won’t process, so those will go immediately back in the water, handled with respect and with as much speed and care as I can in the situation. Of course, I wouldn’t take any fish that’s not in season but that’s beside the point. Bottom line, respect the fish. We may eat them but they aren’t toys, or insignificant animals.

Big Dave and Popov for the win with not rinsing your freshly caught salmon in freshwater and not coating the meat with slime from the skin. I also put a paper towel in the bag to help soak up the slime and keep it off the meat until I get home and finish processing it.

Thanks for the info about the salt brine and the not rinsing the flesh with tap water . I've always had a problem with the salmon meat after rinsing off before cooking kept thinking my old house had bad water from the pipes again thanks.

I just made myself a cudgel out of pvc pipe for bonking. 1/2" was the smallest they had pre-cut, but 1/4 would probably do and be lighter. I marked inches on it as well, so it's a ruler. Hope to test it out today!

I had read about the ikejime method before and was kind of skeptical. So I tried it on catfish, thinking if it worked on them, it would work on anything. I did one with ikejime and bleed and the other by just throwing it in the cooler like traditionally has been done. The filets of the traditional method were that mildly orangish yellow color, that you see with catfish. The ikejime filets were milk white. There were still some yellowish areas around the top of the filet, but I believe that was mostly fat. Its a pain if you’re just on the fish and are trying to catch while you can; but if you have the time, it does work.

Not totally sold on the Ikejime method. Seems like there could be room for "error" that would not dispatch the fish as "painlessly". I'd rather be bonked and out of it or knocked out and then get a final bonk, then stabbed in the head and then get another stab in the head if the first didn't do it. I'm originally from Washington and have grown up and continue to do the bonk and bleed. Aside from that, thanks for all the awesome video content!

One of the best. Talk about normative decisions. Either do the bonk method or use Ikajima. I still think you should have cut the tail to allow the blood to run through but whatever was off camera finished the bloodletting results…ah maybe in the ice slurry or ice cooler. Excellent to see you grow in one year in an instant.

The wire through the spine via puncturing the brain is getting rid of the nerves so that it'll no longer transmit signals from the brain that would release lactic acid that would cause the meat to spoil. The lactic acid is released due to the stress of being killed, so the wire ruining the nerves in the spinal cord is once again preventing the transmission of nerve signals so that lactic acid won't be released. Also, THe salmon roe can be made into Ikura, which is the Japanese preparation of marinated salmon roe of using soy, salt and dashi to flavor the roe vs Western preparations of caviar with lots of salt. Ikura is great over hot rice (Ikura Don (pronounced with a long O kinda like "doun", not pronounced "Don" like a Mafia Don). Or you can sell the roe to sushi restaurants.

i know those are the instructions on that tool. but that isn't the traditional way to do ikejime. head spike. bleed out, then wire the spinal cord, then on ice. the reason to do the spinal tapping after the bleed out is because it will bleed out even more blood then the ikejime tool's method.

Pithing (brain spike) isn't as humane as people think. It stops their cognitive but as you can see it doesn't stop their physical response. The other way is coming in from the base of the skull and pithing thru the center of the brain which affects physical response first. But it's STILL not the greatest other than paralysis with consciousness. The BEST way is firm bludgeon with brain cell DESTRUCTION. You don't want blood congeal? Work faster, and use gravity. No matter what you do, it's still better than being chewed by a bear while it lives, and flaps around in misery and pain while impaled in bruin teeth. Animal rights people need to 'bear' that in mind. EATING is messy business in nature, right down to plants that ALSO feel pain. Mercy is speed.

The method you are using is called Ikejima (ee-kay gee-may). I have never ever seen anyone get this so wrong! If you have done this right the fish would have gone into Paralysis causing the gill plate and mouth to open. Nip the tail to expose the spine, then run the wire up the spine to sever the nerve causing the fish to relax and enter into Rigamortis. Had you done the research you would have found that this is an ancient method used in Japan., and it has everything to do with stopping the nerves in the spine from communicating to the brain. This eliminates the adrenaline which makes the fish taste bad. . You're a good fisherman. You create useable and informative content, so do your homework, KZitem if full of content creators don't follow the crowd.

Why do you gut the fish if you are going to then fillet it? You're just creating more work for yourself. If you don't gut the fish, it's actually easier to fillet it (the cavity isn't hollow, so the sides of the fish "stick up" more making it easier to get a straight cut from spine to belly). Glad you show how to humanely dispatch a fish and how to to care for the meat.

im not sure if this is the best way but id say you catch a nice walleye ice fishing then bleed it and put it in your homemade live well, then there's no need to put it on ice cause its already in really cold water as well as no blood. if you want it even fresher just bleed it for an hour then cook it on the ice.

So, 2 weeks ago I had Frankenfish. I had a monster perch I tried to bonk like 8 times AND I cut the gills, the thing kept trying to breath and move even when I was trying to filet it. It freaked me out a bit when it kept moving while I was cutting it.

It's not a sin to have this sensitivity. Maybe if you think about the fact that the quicker you kill it, the less it would suffer. Once it is dead, it will no longer be aware of anything else you have to do in order to prepare it for the table. So if you can kill it in such a way that "it never knew what happened", that would be the most merciful. One second it would be alive and the next it would be gone: meat, no longer a fish. (If it continues to quiver or flop, that is not necessarily an indication of life, just erratic nerve impulses. A chicken with its head cut completely off will run, fly, and flop around for a minute or two afterward. Hence the saying.) Another thought would be that death is required in order to sustain life. It's the way of nature. Nothing, animal or vegetable, lives except by consuming something that has died, whether that something was previously animal or vegetable, fresh or decomposed. If you buy packaged fish at the store, it was at one time a live, swimming fish. It's just that someone else killed it and did the difficult work for you. You're to be commended for having the desire to provide food for yourself. This is the way man lived for thousands of years. It may take some time, but doing it yourself will give you a better understanding and appreciation for your own place as a man in the natural world, as a participant rather than a mere observer. If you have any religious preference, you may consider giving thanks to your deity for the gift of the fish's life in order that your own life may be prolonged, and vow to be worthy of the fact that the fish died so you could live. It amazes me how my fellow outdoorsman can convince themselves not to believe their own eyes and common sense. Those fish did not die instantly and that was not just nerves. Also, if they were dead, the blood would not be pumping out of the fish. The brain is about 1/3 the size of the eye and it seems like it would be hard to hit consistently with that tool. We need to come up with even an even better way(s).

Being a party boat guy the skippers tend to frown upon bleeding the fish at all. That is a bit upsetting but understandable. Friends with private boats often have small kiddie pools or buckets set up for it. Today is the first time I have seen the Ikejime method. A bit time consuming when you are over a hot spot but it looks like you get a much better fish from it!

Soak the filets in the water /salt mixture? Is that what you recommend?
