AYAM GORENG - 2-3 servings

2 lbs Chicken (drumettes, flats, or other parts of your choice)
1-inch Ginger sliced
1-inch Galangal sliced
1Stalk Lemongrass (white part only)
1 Large Red Chili (de-seeded. keep the seeds in if you want it spicy)
1 Large Shallot
5 Garlic Cloves
1.5 TBSP Water
1 TBSP Curry Powder (I like the flavor of Babas Meat Curry Powder)
1/2 TBSP Turmeric Powder
1/2 TBSP Chili Powder
1 TSP Coriander Powder
1/2 TBSP Salt
1/2 TBSP Sugar
Handful Curry Leaves
1 Egg
1 Cup Corn Starch
Blend lemongrass, chili, shallot, garlic, ginger, and galangal with 1.5 TBSP water or enough to make a paste.
Combine paste and the rest of the ingredients (minus egg & corn starch) with the chicken wings.
Marinate 2hrs - overnight in the refrigerator.
Take chicken wings out of the refrigerator 45 minutes before frying.
Bring a pot of vegetable oil to 325 F / 162 C on medium-high heat. ~10 minutes.
To test if the oil is ready without a thermometer, stick a wooden utensil into the oil and if you see rapid bubbles, the oil is ready.
Fry chicken wings in batches, be careful not to overcrowd the pot otherwise the oil temp will drop drastically.
Fry on medium heat until golden brown and crunchy. Drumettes & flats will take ~6-8 minutes. (thighs & drums ~12 min, breasts ~15 min)
Fry the curry leaves with the second or last batch of chicken wings.
Drain on a wire rack for a few minutes before serving.
