I just made this. I used Charleston peppers instead of jujitsu peppers. Absolutely amazing. My teenage son asked what's for dinner, I said a sam the cooking guy recipe. He didn't even ask what I was making. He just said, oh this is going to be awesome.

Just cooked an amazing 4 egg scramble with Andouille, ham, bacon, green peppers, Roma tomatoes, onion, and shredded potatoes, only to sit down and watch this amazing burrito be made.. I'm absolutely stuffed from breakfast, but am already salivating from this. Thanks Sam!

You mentioned gardening. I grow big boy tomatoes planted right next to various pepper plants. The roots entangle and the tomatoe plant sucks up the oils of the pepper plant creating spicy tomatoes!! Freakin YUMMM!

that's one of many quirky habits that Sam and i share! in fact, i think the only thing we may differ on is our attitude towards garnishing a dish -- Sam does it for looks over taste, while i would rather each person garnish their own to their own taste so as to get the best bite every time. i suspect that you might be an Aspie, Sam. i don't mean to pry. i'm definitely an Aspie, but i had to self-diagnose, and that didn't happen til i turned 40. nowadays, a great many of the folks i meet up with on the net are Aspies. i have a half-assed theory that we Aspies are Evolution's Next Step. i mean, nobody ever claimed that we've stopped evolving ... have they?

One way to tell the heat of peppers is to look at the stem. Mild peppers will usually have a straight stem and hot peppers will have a curled stem. I learned this from pepper farmers when I lived in New Mexico. It really is pretty accurate.

I love using my pressure cooker to make slamming pork loin for tacos, burritos, taquitos, pulled pork sandwiches, etc. You get the idea. Just depending on the flavor twist I put on it. So good! I bet this was so good!

I do my chuck roast in a Dutch oven at 275 degrees for 3 hours. Then I shred it and put it back in for another hour. DELICIOUS!!!

Yep, but I would sear the meat in a pan and then transfer to the crockpot. High for 4 hours, low for 8 hours.

My second attempt at this recipe. I do not have a pressure cooker but that’s OK I’ve used a large Cast iron Dutch oven. My question is what temperature would you utilize 250 or 275 for four hours? FYI I incorporated this into your enchilada recipe as a variant for chicken and it went over extremely well. Keep up the videos. Make America Cook Again!

You gotta put brown rice and black beans down for the base. THEN you put the meat and salsa in. Then a bunch of cilantro (coriander leaves for our Euro friends) and heaping gobs of sour cream and avocado. You'll need two tortillas to hold it all. Don't go soft on the cheese - pack in two handsful of shredded Cheddar. Also put plenty of mulicolred cabbage inside. Now roll like your life depended on it. Then seal with a toothpick and lower it into 350F oil for 2 minutes per side. Orele! You have just created the Chimichanga to rule all chimichangas.

I'm originally from SW Michigan...the Grand Rapids area to be specific. There is a local food favorite there called the Wet Burrito. Very similar to what you're doing except they mix the enchilada sauce 50/50 with brown gravy. Once ladled over the top, it's topped with melted cheese, diced onion, and sour cream. it's amazing! Give it a try.
