A amazing and super easy recipe for Carrot cake from Chamali's Kitchen.
INGREDIENTS :-
4 large eggs(at room temperature)
130g plain flour and 130g whole wheat flour(or you can use 260g plain flour sifted)
340g grated carrots
200g grated apple or pineapple
100g walnuts or Cashew nuts
20g walnuts or cashew nuts
300g sugar
240 vegetable,corn,sunflower or olive oil
1 1/2 tea spoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cinnamon powder
2 teaspoons vanilla
CREAM CHEESE FROSTING
180g Cream cheese (at room temperature)
30g butter (at room temperature)
250g icing sugar (sifted )
2 teaspoons vanilla
INSTRUCTIONS :-
Carrot cake -
Preheat oven to 180c
Butter two 9 inch cake pans and line with parchment paper.
In a bowl flour,baking powder,baking soda ,cinnamon powder and salt .Then mix everything together.
In a Bowl beat the eggs about a minute and add sugar and vanilla and beat on high speed until the batter is thick.Then gradually add oil and add the flour mixer on low speed until well combined.With a spoon or spatula fold in the grated carrot and apple then add chopped nuts.After everything well mixed divide the batter between the two pans and bake 25 to 30 minutes.
Remove the pans from the oven and let the cakes cool.
Cream cheese Frosting -
Add butter and beat until smooth.Then add cream cheese and vanilla beat well.After add icing sugar gradually beat until frosting nice and smooth.
