I would’ve liked to see them up close and see you touch it and take a bite to see the chew. I’ve never seen a chewy praline. Thank you for the recipe and the tip on the pan. They both look amazing.

The key to using waxed paper is putting newspaper under it. The wax doesn’t stick to the newspaper. I do this every year. You can also use aluminum foil, and use it over if you’re making more than one batch

This recipe is da bomb! My wife and I made up a half-batch and we're so sorry that we didn't go all the way! I did toast the pecans a little, but I won't do that next time... it's unnecessary and it adds just the slightest bitterness to an otherwise perfect prAline (long A). Sorry, in Texas we say it that way. Or at least I do. Google says it's prah-leen, like Gail says, but no matter which way you say it, these are dang good!

Yes. I agree. I lightly butter the parchment paper. But, after they cool and you transfer them to someplace else, you don't have to do the butter. Merry Christmas!

First time seeing your channel. I really like your detailed and no rush instruction style. I love a caramel-y anything, lol, so I will have to try this. The first time I tried pralines was at Riverstreet sweets in Savannah Georgia. They were amazing. Can’t wait to try your recipe and hoping I will get close the those or maybe even better.

Oh, I'm so glad you found the channel. Thanks for watching. I agree - pralines are AMAZING! Years ago, I would buy pralines every chance I got and was determined to learn how to make them. I made some that were not good at all, and I had to throw them away. After experimenting so many times, I finally found a recipe that was ok but not great. I tweaked it a little and came up with these, which are absolutely delicious and just what I wanted. I hope they turn out for you. Let me know what you think after you make them. Have fun and enjoy! I made these last night. I halved the recipe except I used 2 teaspoons of vanilla because it seemed like you had used more than 3 😂. It turned out Wonderful!! Thanks so much!

If you melt the butter in the heavy ceam in the microwave or a small saucepan, you won't lose as much heat when adding the butter & cream to your pot so it doesnt take as long to bring back to temp. I cant wait to make these.. i ordered the candy thermometer you use.. mine have all been broken over the years. I love the caramel type pralines... dont really care for the sugared types.. yum! Cant wait! Thanks!!

So, are these chewy because of the corn syrup ? What if I just leave the corn syrup out, will they come out like traditional pralines ?

The corn syrup is a major ingredient in these pecan pralines, and it does add to the the texture of the pralines. If you leave out the corn syrup, it would alter the pralines in the flavor and the texture. I have never experimented with leaving the corn syrup out because these are so good with all the ingredients combined. Years and years ago, I experimented with making the pralines, and the results were not anywhere as good as these. Try experimenting and see what you think. Let me know what you find out. Thanks.

Thank you for commenting. Yes, you can add vanilla. I sometimes put up to 3 teaspoons of vanilla in mine. Just put it in after you have finished cooking it.

Are the temperatures you cooked the candy to for sea level? If you live above sea level you have to adjust your temperature.

The altitude where I live is about 1299'. Yes, you are right, altitude does make a difference, and you do have to adjust your temperature to make it match to your altitude.

These look delicious to this south Louisiana gal! I live in north Georgia now and would love to make these... we really don't need 100 pralines though. Would it be OK to make up a half recipe at a time? If not, are they good to freeze?

I have never tried to make half the recipe or freeze the pralines, but I think you should be able to do either or both. If you half the recipe, you might use a smaller pan, maybe a 2 quart size or a tad bit larger. Don't use any thing size smaller than that. I think the directions would be the same. For freezing, I found out that you can freeze them. Make sure to keep them in an airtight freezer bag. They should be good for a couple of months. Now you are a Georgia gal. That is still cool! I used parchment paper. I found that it worked just fine. I cut the paper to the size I wanted, placed the pralines close to the edge in the middle, and wrapped. Then I twisted the ends in the same direction. The parchment paper held its shape and did not come lose. I’m sure there are other papers you can use. I just happened to have parchment paper on hand, and it did the trick for me.

I’m not saying this is a bad recipe but you have pralines that are sugary and you have pralines that are slightly on the chewy side. These are neither. These are not pralines, they are caramel with pecans. Get offended if you want to but I’m calling it the way it is. If someone is expecting a praline with a slight chew, they will be disappointed.

I make caramels also using a different recipe. The recipe is on the channel. The caramels are less stressful because when you bring them to a boil, you stop stirring! You can put pecans on the parchment paper and pour the caramels on top of them. That won't give exactly the same effect, but it is still so delicious and less stressful. I've done it this way before I discovered the Chewy Pecan Recipe. Let me know if you try this and what you think. Good luck!
