Recipe from the video (with standard cookie-making instructions) In one bowl sift together: 2 1/4 cup flour 1/2 tsp baking powder 1/4 tsp baking soda 1 tbsp cornstarch 1/2 tsp salt Set aside In a second bowl, beat vigorously together: 1/2 cup butter, room temp 1 cup sugar Add and mix well: 1 egg 1/4 cup sour cream, room temp 1 1/2 tsp vanilla extract Add the dry ingredients into the wet ones, mix until the batter is uniform then stop. Use a spoon or scale to measure equal portions. (Rolling them into smooth balls will make the edges bake more evenly.) For a cookie like Lofthouse, bake them low and slow to prevent browning. Probably 275-300 F. Add buttercream frosting on top, don't frost until the cookies are TOTALLY cooled. ETA: I have not made this recipe yet, but based on similar recipes I've baked I would recommend starting with 7-9 minutes in the oven then adding 1-2 minutes more as needed. Ideally it won't brown (maybe a little gold, if you want) but it shouldn't look shiny or jiggly either. ETA2: @GraceTaylor1900 has made these and put their comments below, including their recommended bake times and a buttercream recipe!

The corn starch keeps the cookies from spreading while baking, allowing them to remain the shape they’re cut out to be, and only puffing upward. The sour cream combats the dry mouth-feel, once they have been baked.

I’m surprised that it’s sour cream. Most old baking recipes that go sideways are Crisco ones (because of ingredient changes, use refrigerated current Crisco to get the same results as old Crisco), or the old recipe had lard in it. Original Oreo filling was powdered sugar and lard (got that from an old timer who worked there in the 1950’s). He loved it!

I found a recipe for these and mixed these ingredients with the instructions from that recipe, please correct me if I'm wrong! Lofthouse cookies •2 1/4-c all-purpose flour •1/2-tsp baking powder •1/4-tsp baking soda •1 tbsp cornstarch •1/2-tsp salt •1/2-c butter, room temp and softened •1 c sugar •1 egg •1/4-c sour cream •1 1/2-tsp vanilla extract •buttercream frosting 1 Combine the flour, salt, baking powder, baking soda, and cornstarch in a bowl then whisk together and set aside. 2 Cream the butter and sugar until fluffy then beat in the egg and vanilla. Add the sour cream and mix until combined, scraping the bowl down as needed. 3 Add the dry mixture to the wet mixture and mix on low until just combined. 4 Preheat the oven to 375°f. Roll the dough out to 1/4 inch then use a 2 1/2 to 3 inch circular cookie cutter to cut the cookies, re-roll the scraps and cut the remaining cookies. Transfer the cookies to parchment lined baking sheets and bake at 375°f for 8-9 minutes or until the cookies are just turning color on the bottom edge. Set aside to cool completely. 5 When cool, top the cookies with a thin layer of buttercream.

It wouldn't be the first one, I've got a copy of one with things like Mrs. Field's chocolate chip cookies, the Big Mac, the McRib, the Outback Steakhouse Blooming Onion... as long as you're labeling the recipe as "your version of" the fast food recipe, and not the actual canonical official recipe, there's not much that can be done about it. Now, if these are actually the real recipes being leaked by insiders, that's trade secrets, which can't be published. But as long as they're an educated guess, a close approximation, "what it must be for it to turn out like that"... there's precedent, it's fine.

@Tiewaz
Жыл бұрын
It's generally good practice as a rule to mix the dry ingredients and wet ingredients separately, just to ensure all the ingredients mix evenly. Another poster here suggested starting at 7-9 minutes, then adding 1-2 minutes as needed. They said ideally it won't brown or maybe a touch gold if you want, but they shouldn't be shiny or jiggly, either.

At what temperature do we bake these?
@Tiewaz
Жыл бұрын
@@kacbcd I would say use the average oven temp of 350F/175C for 8 - 12 minutes. Check them at 8 minutes, and add a couple minutes before checking again. If you can, look in the window, don't open the oven as that disrupts the temp and time. ie, if you open the oven one or more times for the first batch and they end up being done at 10 minutes, the second batch will cook a little faster if you don't open the oven like you had for the first go. Something I still have to remind myself every time I'm using the oven because I have the memory of a goldfish and the patience of a toddler when sweets are involved.
