Fried chicken is one of my favorite dishes and I can't tell you how much I love this recipe. It really is the best fried chicken ever in my opinion and the combination of crispy hot chicken, dill pickles and coleslaw come together to make this dish delicious!

NASHVILLE FRIED CHICKEN - HOT CHICKEN
Makes 4 portions
For the Fried Chicken -
8 boneless skinless chicken thighs
1 large jar of dill pickles (about 1 ½ cups of juice drained)
2 TBS sugar
1 tsp kosher salt
Bowl 1
2 cups buttermilk
¼ cup hot sauce (I like to use Franks)
Bowl 2
2 cups flour
2 TBS creole seasoning
¼ cup cornstarch
For the brush on glaze -
½ cup oil (from the frying oil)
2 TBS cayenne pepper
2 tsp chili powder
1 TBS smoked paprika
1 TBS brown sugar
2 tsp garlic powder
1 teaspoon salt
For the coleslaw -
1 cup finely shredded cabbage
1 cup finely grated carrots
3/4 cup finely diced onion
1 cup mayonnaise
1 tsp celery seeds
1/4 cup honey/agave/sugar
salt and pepper to taste
Warm the pickle juice, salt and sugar in a pan until dissolved. Allow to cool. Pour into a zip lock bag with the chicken thighs and refrigerate for at least an hour or overnight.
Remove the chicken from the brine. In bowl 1 whish together the buttermilk and hot sauce. In bowl 2 whisk together the flour, cornstarch, and creole seasoning.
Dredge the chicken in the flour mix, then the buttermilk mix, then back in the flour mix and place onto a tray, repeating the process.
Set the fryer to 350 degrees F.
Fry the chicken thighs for 7-8 minutes or until the internal temperature is 165 degrees F. and remove to a wire rack.
Mix the coleslaw ingredients together in a large bowl.
Scoop half a cup of fry oil from the fryer and whisk in the cayenne, chili powder, garlic, smoked paprika, brown sugar, and salt. Brush over the chicken thighs and serve with French fries, sliced white bread and dill pickles.
