Skirt Steak, pounded thin and seasoned with salt
4 eggs, beaten with about 3 tablespoons of water
equal parts panko and fine breadcrumbs, seasoned with a hefty pinch of garlic powder, dried parsley, and salt to taste
all-purpose flour, seasoned with salt and pepper
tomato sauce, warmed on the stove
grated mozzarella
maybe something sharp like caciocavallo or pecorino, grated
hot giardianera
roasted bell peppers
oil for frying
some chopped italian parsley
a nice east-coast style hoagie roll, toasted briefly before sandwiching
sandwich paper
Dredge the steak in flour, then egg, then breadcrumb and set it aside.
Preheat the oil to 350°F, then fry the steak, one piece at a time until it is crispy and golden brown. Once fried, set it on a paper towel or wire rack to cool briefly, then dip it in tomato sauce, place it on the hoagie roll and top it with the cheese, giardianera, parsley and peppers.
Roll up the sandwich, stuffing all the inside in, cut it in half, then wrap it again. Eat immediately.
