This dries really well in a dehydrator, and keeps for ages that way. Just like the bought pasta. (Also makes great pasta shapes) Thank you.

Just tried this...Amazing! I used psyllium husk powder because I didn't have Xanthan gum. Wow...just Wow! I put some EVOO, garlic powder, cracked black pepper, and Parmesan and I was in PASTA HEAVEN. On a side note, I kneaded everything by hand because I didn't have a mixer but I did buy the recommended pasta maker. Thank you for sharing this recipe! This is a definite keeper!

I made this last night and while I was making it, it didn't smell like fresh pasta the way I used to make the regular flour pasta. But after I cooked it and then tasted it, BINGO! You couldn't tell the difference! It tastes just like regular homemade pasta! So now I can start making fresh pasta again and use my Made in Italy, Imperia Pasta Machine again! Thank You!

There's no point keto isn't just low carbs it's super low carbs so low that you might as well stay away from carbs. If you're trying to reach ketosis just consume meat and multivitamins.

I made it and it was the closest thing to pasta since starting keto!!! It tastes great and has a very good pasta texture. I could only roll out fettuccine size noodles, but my next experiment may be to freeze the rolled out dough and then try and crank out spaghetti size noodles. But, I digress... it was awesome!!

Thank you for this! As someone of Italian descent, I grew up with lots and lots of pasta. Being Keto has meant, for the most part, that I had to give it up. Cannot wait to try this recipe! I'm excited to try this! Going shopping now! I highly doubt that the super markets have been cleared from oat flour and wheat gluten! What I love about this recipe is that this behaves just like pasta. It looks like pasta dough and I can roll it out like pasta dough. Possibilities are endless. Now I can feel good about using my pasta machine without feeling bad!

Ok. I have made this a few times without xanthan gum and though it was ok and a decent substitute, it still lacked something. Xanthan gum isn't easily found in this country so I ordered some. Today I made it with the xanthan gum and it came out much better. It had less of the gritty feel from the oat fiber and a chewier, smoother texture.

I just made this twice. Unfortunately, the other comments were right. It does taste like boiled cardboard☹. The texture is very grainy. My dough was brown, not yellow like in the video.

I made it, it wasn't very good. I was excited to try it because I have made fresh pasta before. The dough formed very well and everything was forming perfectly . Once I cooked it it was chalky in texture. I understand it is not supposed to be the same, but with all the hard work it takes to make fresh pasta, i wont make it again. I did make the keto bread recipe and it was great!!!

I just made this. Mine is a darker color than his, but I was able to run it through my pasta machine exactly like he did. That was so fun! I cooked just a tiny bit too taste it before giving it to my hubby. I do NOT think it tasted like cardboard, like one person said. It doesn't taste or feel like the egg noodles I used to make, BUT it has a nice flavor. The texture is different from egg noodles. BUT it holds together like egg noodles, and it's not too chewy. It did seem to be the tiniest bit grainy. Not sure what that is from. Maybe the quality of my oat fiber and/or viral wheat gluten. Who knows? I do know one thing...I will make more noodles, whether my hubby likes it or not. 😁 👍

Keto King if you're going to eat fettuccine or any type of spaghetti use a Fork and tablespoon and you roll the pasta. That is how pasta is supposed to be eaten if you have any etiquette

6/4/22-I finally made it. It was my first time. I really like the way they came out. I don't know about anyone else but, I think I have to get use to the taste. It did have a different taste to it or, an after taste, probably from Oat fiber & vital wheat gluten. But, you can't beat the amount of carbs you're getting and it was very filling. I tried it with alfredo sauce, next time I will try it with spaghetti red sauce. 6/5/22. Today I cook the leftover noodles a little longer than I did yesterday. What a big difference in taste. Yesterday there was a bit of an aftertaste on the noodles. Today, no aftertaste. It was awesome. Note to self: cook the noodles longer😂

On the vital wheat gluten I used the brand called Larrisa Veronica. On the oat fiber I used NuNatural. I found them online. FYI, I found something called Palmini hearts of palm, which is a vegetable cut up to look like spaghetti and to tell you the truth, I can't tell the difference, especially when I topped with sauce. They come un spaghetti form, lasagna form and if you look in Walmart, there's a Great Value brand of those too, that's less expensive. But I'm too lazy to make the noodles, I just get those.

I have been frustrated the last few days as other keto pasta recipies either were too much cheese (although I am a dairy person) or too almondy tasting. YAY....will enjoy a Beef Strongonoff tomorrow...finally! Thank you so much for your work on this. I have normal gluten powder and the only fiber base I have is potato...surely it will work. I got to thinking how chow mein is just fried pasta, and tortilla chips are just fried corn pasta...See where I'm going with this? I used the pasta machine on small bits of pasta and took it down to the thinnest setting. I deep fried in peanut oil and they took such a short time to fry and flip. They stand up to jarred salsa. You need to sprinkle salt or salt and vinegar seasoning over them while still hot and oily. I would probably add more salt for the chips version next time.

Cardboard here too except hubs says it was more like rubber. It was a tossup to which was worse - the texture or the taste. We were so careful - can’t imagine why some loved it and others had our experience. Keto King, did you have any fails in your practice batches? If so, please share how you got past them. Human Practitioner, thank you so much for trying to help those of us who were disappointed. Hubs and I lack your knowledge (we had never heard of Vital Wheat Gluten or Oat Fiber) and we want this to work so badly so we will check back here frequently - counting on you figure this out for us. I've used your bread recipe flour mix for all sorts of things now substituting the golden flax seed meal with either sunflower seed flour, soy flour or my favorite Lupin flour. For bread: lupin flour works the best and tastes like white bread (with a little added Erythritol in it, some Lupin flour can be a bit bitter) , for pasta, I mix lupin and soy (half and half). It's not for everybody thought, Soy or lupin (which is a legume very similar to peanut) does not cause inflammation for me, but everybody is different. Thanks Keto king!

I think your macros are off, oat fiber is 1 net carb per tsp, a half cup is 24 tsp. And wheat gluten is 4g net cabs per 1/4 cup so 8 for your recipe. thats a total of 32 net carb / 4 8 net carbs per serving which still isnt bad.

I am trying this with my electric pasta maker today....wish me luck. Edit: Okay .....my machine jammed up....but it was quick extruding when I would play around with it. I boiled water with salt and olive oil in it while I was waiting on it. It looked like the color of whole wheat.....I think that is my oat fibre (Anthony's brand). Result: if you are not fond of the taste of oat fibre, you will not like the final taste. I think that less oat fibre and more VWG or a combo of VWG and Lupin flour may or may not accomplish a favourable taste. This one is for experimentation. Texture was pretty decent....it was the taste that needs some tweaking for my palate.

Anthony's brand oat fibre has a terrible taste (I know, i tried it). Lifesource Foods brand is the best one, no strong or bitter flavor.

Unfortunately tastes and texture like cardboard. Yuck. Tried it again to make sure...nope. I’m very proficient in the kitchen. Been cooking my whole life. It’s absolutely awful. I don’t understand. Watched video at least 10 times thinking I did something wrong. Nope. Followed to a T. And even looks the same as yours Keto king but not good at all. Had other family members taste it to be sure. They all hated it. Lol. I don’t get how some people like this. Completely baffled 😕 Sorry

I was so excited for this keto pasta, but I need to try it again. My first try was not successful because I could not roll it out. I bought the attachments for my KitchenAid mixer, bit it is smaller in size and didn't seem to work as well as the one you use. Not sure what I can do to improve my results with what I have.

Mine came out a little grainy....but I DID overwork the dough. Any suggestions? Also I used Avocado Oil instead of Olive Oil...How can I get mine as smooth as yours? Also....If I went under setting 3 on the pasta maker the dough got too thin...what setting did you go to?
